Mexican Chicken

Quick and easy Mexican chicken twist.

  • Prep: 5 mins
  • Cook: 3 hrs
  • Yields: Serves 6


2 chicken breast whole

1 taco seasoning pack

1 tin creamed condensed chicken soup

1 red capsicum sliced

1 red onion sliced

1 tub cream (250mls)


1Place all ingredients (apart from cream) in the slow cooker.

2Cook on high 3 hrs.

3Remove chicken and slice then returned to the pot.

4Add in 1 tub of cream.

5Season salt n pepper.

6Bring back to heat then serve over steamed jasmine rice.

Yum! The whole family loved it, even my husband who doesn’t like spicy foods. Not that this is too spicy. Will definitely be having again
