A great LOW CARB alternative to mashed potato
2 hrs 10 mins
500g rough diced cauliflower florets
1 tbsp butter
1Place chopped cauliflower florets in slow cooker
2Add 3 cups of warm water (not too hot) to bowl to cover cauliflower
3I used a 1.5L slow cooker for this recipe but you could cook it in larger slow cookers, it just may cook faster :)
4Cook on high for 2hrs or until fork tender
6Transfer to large bowl, add butter, mash well and serve
7A great low carb alternative to mashed potato

Made this tonight. Was super yum. Very easy to prep and used it as a replacement for potato or rice. Both my 8yr old and 1yr loved it. I loved it too 😊

A light an easy alternative to mash potatoes, will be a regular here 🙂

I loved this, but my potato loving boys weren’t so keen. Will do again for me, along with potatoes for my boys. Was great to have an alternative to potatoes when I know that we will be potatoe’d out over Christmas and New Year.
