Ingredients
500g rough diced cauliflower florets
1 tbsp butter
Instructions
Place chopped cauliflower florets in slow cooker
Add 3 cups of warm water (not too hot) to bowl to cover cauliflower
I used a 1.5L slow cooker for this recipe but you could cook it in larger slow cookers, it just may cook faster :)
Cook on high for 2hrs or until fork tender
Drain
Transfer to large bowl, add butter, mash well and serve
A great low carb alternative to mashed potato
