Low Carb Cauliflower Mash

A great LOW CARB alternative to mashed potato

Ingredients
 

  • 500g rough diced cauliflower florets
  • 1 tbsp butter

Instructions
 

  • Place chopped cauliflower florets in slow cooker
  • Add 3 cups of warm water (not too hot) to bowl to cover cauliflower
  • I used a 1.5L slow cooker for this recipe but you could cook it in larger slow cookers, it just may cook faster :)
  • Cook on high for 2hrs or until fork tender
  • Drain
  • Transfer to large bowl, add butter, mash well and serve
  • A great low carb alternative to mashed potato
