Lemon and Garlic Butter Sea Scallops
Serving: 2
Ingredients
- 60 grams butter, melted
- 3 cloves minced garlic (approx. ½ T)
- 30ml fresh squeezed lemon juice
- 1tsp dried parsley
- 300g fresh sea scallops
Instructions
- Combine all ingredients except scallops in mixing bowl.
- Add scallops to slow cooker
- Pour over the butter sauce
- Cook on high with tea towel trick in place for 40-45 minutes approx. or until scallops cooked through

Very tasty. Just had to give these a go. Cooked great in my lil 1.5lt cooker. I’d probably use a little less butter & more lemon next time, as I like a bit of tang.
Further to my above comment – the texture was perfect. I was hesitant to try because I couldn’t avoid thinking they would be rubbery. Much to my surprise & delight they melted in the mouth. I’ll happily make again.
