Lamb and winter vegetable soup
Serving: 6
Ingredients
- 800g diced lamb
- 2 onions
- 3 carrots
- 2 stalks of celery
- 1 parsnip
- 1 swede
- 1 turnip
- 1 small sweet potato
- 1 potato
- 2 packets of chicken noodle soup
- 3 tbsp garlic
- 1/3 cup pearl barley
- 2 tbsp parsley
- Splash of soy
- Salt and pepper
- 1 tin of creamed corn
- 1 chicken stock cube
- 3 litres of boiling water (Note from Slow Cooker Central - reduce boiling to just HOT tap water to prevent bowl cracking risk if ceramic bowl slow cooker)
Instructions
- Dice all vegetables
- Put all the ingredients into slow cooker
- Add 3 litres of boiling water
- 3 hours high, 2 hours low
- Stirring every hour

This was my first time cooking lamb and vegetable soup and it was absolutely delisious! Whole family loved it 🙂
3 litres of boiling water??
I personally would have it not boiling for cracking bowl risks if ceramic bowl but hot tap would be ok
But yes Melissa has specified 3L 🙂
