Creamy Pork and Cider
A creamy pork and cider stew with the added crunch of crackle
Ingredients
- 1-1.5kg Pork (if using a large piece cut into 4 or 5 pieces)
- 1 Leek, thickly sliced
- 150mls Cream
- 200mls Chicken Stock
- 240mls Apple Cider (see notes)
- 2 tblspns Cornflour
- 100g Green Beans
- Pork Rind
Note
- You can substitute 150mls Apple Juice and 90mls Apple Cider Vinegar for the Apple Cider
- I buy an extra piece of pork rind from my butcher or some supermarkets sell it separately
Instructions
- Place pork in slow cooker bowl with leek
- Combine cream and cornflour in a jug, add stock and pour over pork
- Rinse the cream mix from jug with the cider, pour into slow cooker bowl
- Cook on low for 5-6hrs (Contempo 5.5L sc)
- Add beans with about 1hr remaining
- Cook pork rind in oven at 200°c for 15-20mins until golden
- Serve with mashed potatoes or pasta and crackle
