A creamy pork and cider stew with the added crunch of crackle

1-1.5kg Pork (if using a large piece cut into 4 or 5 pieces)

1 Leek, thickly sliced

150mls Cream

200mls Chicken Stock

240mls Apple Cider (see notes)

2 tblspns Cornflour

100g Green Beans

Pork Rind


You can substitute 150mls Apple Juice and 90mls Apple Cider Vinegar for the Apple Cider

I buy an extra piece of pork rind from my butcher or some supermarkets sell it separately


1Place pork in slow cooker bowl with leek

2Combine cream and cornflour in a jug, add stock and pour over pork

3Rinse the cream mix from jug with the cider, pour into slow cooker bowl

4Cook on low for 5-6hrs (Contempo 5.5L sc)

5Add beans with about 1hr remaining

6Cook pork rind in oven at 200°c for 15-20mins until golden

7Serve with mashed potatoes or pasta and crackle

This was a hit tonight at our place! We had 2 other families join us. I doubled the recipe and it was on from 8am to 6.30pm. Lovely!
