Coconut Cake
A quick, easy coconut filled cake
Serving: 1
Ingredients
- 1 cup SR Flour or Gluten Free SR Flour
- 1 Cup Coconut Sugar or Brown Sugar
- 1 Cup Dessicated Coconut
- 1 Cup Coconut Milk
Instructions
- Combine all dry ingredients
- Add milk and stir until combined
- Pour into lined cake tin/donut tray/muffin tin
- Place on rack in slow cooker insert with about 3cm of water in insert
- Place a tea towel under the lid
- Cook on high for 4-4.5hrs (or 2-2.5hrs if using a donut tray), times may vary depending on flour used and your slow cooker
Notes
- Chocolate Coconut variation: Add 1 or 2 tblspns Cocoa powder to dry ingredients

My first attempt making a cake in my slow cooker. This was very quick and easy to make. I cook the cake for 3.5 hours and it was moist. Good for kids lunches.
So delicious!! I put 1/2 cup mango chopped up in mine. It’s going on my regular cake making list!

Yumminess! So easy to make and the most moist delicious cake. I did a double mixture and cut mine up like a slice. Everyone loved it. Got the ingredients to make it again.
This is a lovely snack that is not heavy and is fodmap friendly as long as you don’t eat it all at once!
