
Creamy Celery Soup
A filling creamy bowl of delicious celery soup!
Equipment
- 7litre Slow Cooker
Ingredients
- 2 bunches of celery chopped
- 1 medium celeriac bulb peeled trimmed and chopped
- 3 cloves garlic crushed
- 2 medium brown onions chopped
- 1/2 kg medium potatoes peeled and chopped
- 2 ltrs chicken stock
- 1 cup pure cream
- 1 tbsp olive oil
- Parsley for serving garnish
Instructions
- Roughly chop all veg etc
- Heat oil in frying pan and add onions.
- Cook stirring for 5 minutes until onions are soft.
- Add celery, celeriac, potato and garlic. Heat on medium heat stirring for 5 minutes.
- Pour into slow cooker and add stock.
- Cook on high for 5-6 hours, then blend soup until smooth.
- Stir in cream. Cook on low for 1 hour stirring occasionally.
- Serve topped with parsley.
