A simple heart warming beef curry.
4 hrs 15 mins
1 Onion (Chopped)
2 Cloves Garlic (Crushed)
1 TBL Ginger (Grated)
2 TBL Curry Powder
650g Beef (Cubed)
Salt & Pepper
420g Chopped Tomatoes
1 TBL Beef Stock Powder
250ml Coconut Milk
5 Potatoes (Diced)
2 Carrots (Chopped)
1/2 Zucchini (Chopped)
1/2 Sweet Potato (Chopped)
1/4 Butternut Pumpkin (Chopped)
1/4 Cauliflower (Florets)
2 Sticks Celery (Chopped)
1 Cup frozen Peas
1Throw all ingredients (EXCEPT: pumpkin, zucchini, celery, peas and cauliflower) in the slow cooker and mix well.
2Cook on low for 3 hours.
3After 3 hours add remaining vegies and continue to cook for the final 1 hour.
4Serve and enjoy. :-)
1My slow cooker cooks at a higher heat than most others. Times may vary.
2If running dry add a cup of warm water

After reading the reviews, I had to give this recipe a go.
With just enough curry to have a slight kick, and without it being over the top, this suited our tastes perfectly.
Topped off with a slice of fresh bread to mop up the sauce
A really lovely dish – perfect for a cold winters evening…

I made this recently with a couple of adaptions as I didn’t have some of the ingredients but still turned out amazing!!! Will definitely make this again ?

This was very flavoursome! I doubled the recipe but only put in 3tbls of curry powder. Still gave it a good spicy bite! I also coated the meat in flour before adding so it was a nice thick sauce & cooked for 8hrs on low. Shall certainly make it again
