Chicken, Prawn, and Mushroom casserole
- 1-2 Chicken thighs
- 1 tin cocktail prawns (usually near the tuna)
- 2 mushrooms - any variety.
- 1 red onion
- Whatever vegetables you like, the more colours the better. I used broccoli and capsicum
- 1 tin coconut milk
- Dice everything up to the size you want,
- Add to slow cooker,
- Pour over coconut milk,
- Cook for 4 hours high, or 6 hours low
