Bacon wrapped stuffed chicken breast

  • 1kg bacon
  • 3 large chicken breasts
  • 1/2 tub cream cheese
  • 200gm block of apricot/almond cream cheese
  • 1grilled capsicum
  • 1-2 cups of spinach/rocket mix


  • Weave bacon lattice style onto glad wrap
  • Butterfly breasts and lay on top of bacon
  • Crumble cream cheese on top of breasts evenly
  • Layer grilled capsicum
  • Top with spinach/ rocket mix
  • Roll firmly in glad wrap and set in fridge for 1/2 to 1 hour
  • Take glad wrap off and wrap in foil
  • Place in sc. On bed of onions and 1cm water and cook for 4hours on low
  • Place under hot grill to crisp bacon for 5-10 minutes.
  • Add cornflour to some of the remaining juices to make lovely light gravy/sauce
  • I served with freshly grilled asparagus and steamed jacket potatoes
