Bacon wrapped stuffed chicken breast

1kg bacon

3 large chicken breasts

1/2 tub cream cheese

200gm block of apricot/almond cream cheese

1grilled capsicum

1-2 cups of spinach/rocket mix


1Weave bacon lattice style onto glad wrap

2Butterfly breasts and lay on top of bacon

3Crumble cream cheese on top of breasts evenly

4Layer grilled capsicum

5Top with spinach/ rocket mix

6Roll firmly in glad wrap and set in fridge for 1/2 to 1 hour

7Take glad wrap off and wrap in foil

8Place in sc. On bed of onions and 1cm water and cook for 4hours on low

9Place under hot grill to crisp bacon for 5-10 minutes.

10Add cornflour to some of the remaining juices to make lovely light gravy/sauce

11I served with freshly grilled asparagus and steamed jacket potatoes
