Bacon wrapped stuffed chicken breast
Serving: 6
Ingredients
- 1kg bacon
- 3 large chicken breasts
- 1/2 tub cream cheese
- 200gm block of apricot/almond cream cheese
- 1grilled capsicum
- 1-2 cups of spinach/rocket mix
Instructions
- Weave bacon lattice style onto glad wrap
- Butterfly breasts and lay on top of bacon
- Crumble cream cheese on top of breasts evenly
- Layer grilled capsicum
- Top with spinach/ rocket mix
- Roll firmly in glad wrap and set in fridge for 1/2 to 1 hour
- Take glad wrap off and wrap in foil
- Place in sc. On bed of onions and 1cm water and cook for 4hours on low
- Place under hot grill to crisp bacon for 5-10 minutes.
- Add cornflour to some of the remaining juices to make lovely light gravy/sauce
- I served with freshly grilled asparagus and steamed jacket potatoes
