4 medium carrots, peeled and sliced
2 tbsp butter
2 tbsp brown sugar
3 tbsp honey
Juice of half a small lemon
2 tsp sesame seeds
1Add peeled, sliced carrots to slow cooker bowl
2Add butter, sugar, honey and lemon juice over carrots
3Stir to combine, cover and cook for 2hrs on HIGH
4I used 1.5L slow cooker, times may vary between machines, so cook until tender
5Drain and reserve liquid.
6Place carrots in serving bowl, spoon 2-3 tablespoons of reserved liquid over carrots, sprinkle with sesame seeds to serve

Absolutely easy recipe and so much easier than the stovetop method! I added frozen beans, broccoli and cauliflower to the carrots after the 2hrs and cooked for a further hour until serving. Awesome that, if necessary, we can switch to keep warm too! Will be making this as a regular side to many meals, thanks for the recipe Paulene 🙂
