500g lean minced beef
1/2 cup raw long grain white rice
1 large grated onion
Salt and Pepper
1-2 cloves minced garlic to taste
Flour to dust
400g can of diced/crushed tomatoes
420g can cream of tomato soup concentrate
1/2 cup BBQ sauce
1 tbsp packed brown sugar
1Combine mince, rice, onion, salt, pepper and garlic in a large bowl.
2With clean hands, combine mix well and form into approximately golf ball sized balls.
3Roll each ball lightly in plain flour to coat and place gently in bottom of slow cooker in single layer.
4Combine tomatoes, soup, sauce and sugar and mix well. Pour gently over the meatballs in the slow cooker.
5Cover and cook on low for approx 6hrs.
6Lovely served with penne pasta and fresh vegetables.

I Stuck with exactly what the recipe said, and the porcupines turned out perfectly!!!
*Tip – I always use 5 star mince when making meatball recipes, I feel a higher quality mince holds it’s texture / shape during cooking better & saves the balls turning to ‘Slop’.

Love this recipe also add taco seasoning and chilli so much you can do with this recipe cooking up a batch to take to my sons house .

My most epic ever slow cooker fail back in the day was porcupines so I feel your pain … I’d accidentally added more rice than I should have when I had my fail and it was like one GIANT porcupine lol lol
I don’t ever fry mine?
But I also NEVER move them or stir in anyway until right at the end so they are firm by then and won’t break apart.
You definitely had the rice volume right? And didn’t stir?
Is your cooker extra hot? Did you still have lots of sauce with them or did it dry out more than it should have? Just trying to brainstorm so reasons why it may not have worked right? 🙂

Pauline – I had an epic fail with this receipe!!!
Help what did I do wrong? Tastes fantastic but meat balls ended up as mush haha.
Gave receipe 5 stars as it tastes amazing but was wondering whether I should have quickly fried them first so
they held their shape?? Followed receipe exactly and quantities and cooked on low for stated time. Not sure why they didnt keep their shape
Would appreciate any feedback

Love this recipe, will often double the meatballs to have on rolls for lunch next day
