Ingredients

1kg skinless chicken thigh fillets

1/2 cup Dijon mustard

1/4 cup maple syrup

1 clove minced garlic

Cracked black pepper

Directions

1Place chicken thigh fillets directly into slow cooker bowl

2Combine other ingredients and pour over chicken and stir to combine

3Cook on low for 4-6hrs depending on your slow cooker

4Served in this picture with mixed veg and Hasselback Potatoes

I am make a version of this at the moment. I roll the drumsticks in flour and garlic powder (not salt) and cracked pepper and brown them in my slow cooker (because I have that option). Then I add the remaining ingredients, except my recipe calls for only 1/4 cup Dijon mustard and an added 2 Tablespoons of balsamic vinegar. Between the drumsticks I poke some carrot wedges and onion wedges. Always I hit with everyone in the family.

yumm. we loved this.
i added about half a cream cheese as we had guests and added rice so it went further and was creamier for the rice

I cooked this for the first time tonight, it was amazing, I served it up with mashed potato, broccolini and cauliflower, a big hit with the family adding it to our favourites list of slow cooker meals….
