EmailTweet 1 Full-screen Lamb Racks Lamb January 3, 2015 Lamb Racks 0 0 5 0 Prep: 15 mins Cook: 8 hrs 15 mins 8 hrs 8 hrs 15 mins Yields: 4 Ingredients2 lamb racks 1/2 cup cranberry sauce (leftover from Christmas - can use plum jam instead) 1/4 cup red wine 1 tbsp tomato sauce 1 tbsp sweet chili sauce 1 tsp minced garlic 1 tsp minced ginger 1 beef stock cube Juice from half a lemon 1 rosemary sprig 1/4 cup dried cranberries in 1 tbsp red wine vinegar (optional) Directions1Season racks with salt & pepper 2 3Sear racks in a hot pan (optional) 4 5Combine all other ingredients in a bowl and mix well. 6 7Place racks in slow cooker & pour over sauce. 8 9Cook on low for 8 hours.
