Ingredients

2 lamb racks

1/2 cup cranberry sauce (leftover from Christmas - can use plum jam instead)

1/4 cup red wine

1 tbsp tomato sauce

1 tbsp sweet chili sauce

1 tsp minced garlic

1 tsp minced ginger

1 beef stock cube

Juice from half a lemon

1 rosemary sprig

1/4 cup dried cranberries in 1 tbsp red wine vinegar (optional)

Directions

1Season racks with salt & pepper

3Sear racks in a hot pan (optional)

5Combine all other ingredients in a bowl and mix well.

7Place racks in slow cooker & pour over sauce.

9Cook on low for 8 hours.
