Lamb Racks
Serving: 4
Ingredients
- 2 lamb racks
- 1/2 cup cranberry sauce (leftover from Christmas - can use plum jam instead)
- 1/4 cup red wine
- 1 tbsp tomato sauce
- 1 tbsp sweet chili sauce
- 1 tsp minced garlic
- 1 tsp minced ginger
- 1 beef stock cube
- Juice from half a lemon
- 1 rosemary sprig
- 1/4 cup dried cranberries in 1 tbsp red wine vinegar (optional)
Instructions
- Season racks with salt & pepper
- Sear racks in a hot pan (optional)
- Combine all other ingredients in a bowl and mix well.
- Place racks in slow cooker & pour over sauce.
- Cook on low for 8 hours.

really nice recipe. the marinade was nice and sticky and was a hit with whole family. I used raspberry jam as that was all I had and turned out well
