A pasta sauce that really packs a PUNCH of fresh flavour with pairings of semi dried tomatoes and basil pesto!

  • Prep: 15 mins
  • Cook: 5 hrs
  • Yields: 5

500g tray of combined pork and veal mince

100g diced bacon

1 small onion, fine diced

2tsp minced garlic (2-3 cloves)

8 sun dried tomatoes halves, diced

1 heaped Tblsp basil pesto

1 tsp cracked black pepper

500g jar of your favourite pasta sauce (I like Tomato with Italian herb for this recipe)

To Serve

500g packet of Penne Rigate pasta, cooked

Parmesan cheese

1Combine all ingredients (except pasta & parmesan), into slow cooker and mix well

2Cook on low for 5hrs

3Serve on cooked pasta with a sprinkle of fresh grated Parmesan

Best to do separately only because to add pasta you need more liquid than this recipe has as it soaks it up significantly. More info HERE

Can I put the pasta in to cook after 5 hours or is it best to cook pasta seperately?

I followed recipe . However I didn’t have sun dried tomatoes or basil pesto. I substituted them with a tomato paste with basil from a tube. Also chucked in a tin of lentils I needed to use. Very yummy. It was even better the next day when all the flavours had enriched the mince.
Will be making this again 😁
