Glazed Meatloaf

Nothing says old style home cooking like a glazed meatloaf.  Great to slow cook as it won’t dry out or burn ?

Equipment

  • 5L – 7L slow cooker
  • Silicone loaf pan

Ingredients
 

Meatloaf Ingredients

  • 500 gram lean beef mince
  • 500 gram sausage mince
  • 2 eggs
  • 1 medium onion, fine diced
  • 200 grams diced bacon
  • 1/2 tsp curry powder (I use keens)
  • 1 tbsp Worcestershire sauce
  • 1/2 cup fine breadcrumbs
  • 1 tsp dried parsley
  • 1 tbsp tomato paste
  • 1/2 tsp salt
  • 1/4 tsp cracked black pepper

Glaze Ingredients

  • 1/2 cup fruit chutney (I use Rosella brand)
  • 1 tbsp tomato paste concentrate
  • 1 tbsp Worcestershire sauce
  • 1 tsp mustard powder
  • 1 tbsp brown sugar

Instructions
 

  • Add 2 cups of hot tap water to your slow cooker and turn on high while you make the meatloaf
  • Combine all meatloaf ingredients into a large bowl and mix really well to combine
  • Spray silicone loaf tin with non-stick spray.
  • Add meatloaf mix to loaf pan, pressing down well. 
    I make a channel along the middle length ways at the top for excess sauce to sit on. 
    I also make a small gap around the edges like a shallow moat above the meat for excess sauces to gather on also so that you keep the sauce up top where you want it ?
  • Combine all the glaze ingredients to make the sauce and spoon over meatloaf, filling middle channel with any excess
  • Carefully place the meatloaf into the shallow hot water and turn back your slow cooker to LOW now
  • Cook for 5hrs on low with tea towel trick in place, ensuring tea towel doesn’t touch top of sauce.
  • Slice and serve. Lovely with creamy mashed potato and your favourite side vegetables.
  • Note: If you only have a metal loaf pan, line it with baking paper first. And sit the pan on a little sheet of baking paper also so as not to scratch your slow cooker bowl.
  • Note: It’s worth getting better quality lean beef mince for this so that your meatloaf isn’t swimming in oil at the end.
