Colcannon Style Mash Potatoes
This is our take on Colcannon, a traditional Irish dish of mashed potatoes with kale or cabbage.
We usually serve this with roast pork or pork and cider.
Ingredients
- 5 Potatoes, chopped
- Handful of chopped Cabbage, Kale or Spinach
- 2 small Spring onions/Scallions, finely sliced
- 1 tblspn Butter
- 100ml Cream
Instructions
- Place potatoes in slow cooker bowl, cover potatoes with water
- Cook on HIGH (Woolworths 1.5L sc) for 4hrs
- Mash potatoes to desired consistency
- Stir butter and cream into mash
- Season with salt and pepper if required
- Add spring onions, cabbage/kale/spinach and stir to combine
NOTE--
- Cooking time varies depending on potatoes used. Softer ones are quicker, harder/firmer ones tend to take longer.
- Omit the Spring Onions/Scallions for Low FODMAP

So good and saved me dirtying another dish for greens. Added a little chicken stock powder to the water. I didn’t use spring onion but added a little onion powder.
would the cabbage be cooked or raw?
We like the crunch so generally use raw greens but you can blanch/boil the kale/cabbage until it softens if you prefer
OMG … love it! Even hubby (who is fussy about his mash) loves it.
