Colcannon Style Mash Potatoes
This is our take on Colcannon, a traditional Irish dish of mashed potatoes with kale or cabbage.
We usually serve this with roast pork or pork and cider.

Total Time 4 hours hrs 10 minutes mins
5 Potatoes, chopped Handful of chopped Cabbage, Kale or Spinach 2 small Spring onions/Scallions, finely sliced 1 tblspn Butter 100ml Cream
Place potatoes in slow cooker bowl, cover potatoes with water
Cook on HIGH (Woolworths 1.5L sc) for 4hrs
Mash potatoes to desired consistency
Stir butter and cream into mash
Season with salt and pepper if required
Add spring onions, cabbage/kale/spinach and stir to combine
NOTE-- Cooking time varies depending on potatoes used. Softer ones are quicker, harder/firmer ones tend to take longer.
Omit the Spring Onions/Scallions for Low FODMAP
