Mango Coconut Curry Sausages 5 0 5 25

A family friendly, mild sausage curry packed with flavour everyone will love!

    6 hrs 15 mins

  • Yields: 6

Ingredients

12 thin sausages of your choice

1 onion diced

1 x 425g can of mango pieces in syrup

1 x 400ml can coconut milk

1 tablespoon minced garlic

1 tablespoon curry powder (I use Keen's)

1 tablespoon cornflour

1 cup spring onion/shallots sliced

Directions

1Place raw, whole sausages and diced onion in slow cooker

2Using a stick blender or food processor blend mango and syrup to pulp

3Add coconut milk, curry, garlic, and cornflour to the mango pulp and blitz again until all combined well

4Pour over sausages and cook on low for 5hrs 30mins

5In the last 30mins add sliced spring onions/shallots

6Total cooking time 6hrs on low

Notes

1This is a medium curry heat. You could halve the curry powder to reduce it to mild. Alternatively we took out our children's serves and just mixed through a half a cup of pouring cream to theirs to reduce the heat to mild before plating them, and then left ours as it was as medium heat.

2Our children enjoyed theirs served with brown rice, the adults enjoyed theirs served with mashed sweet potato

3In the last hour or so of cooking time I use a plastic egg flip or spoon to 'cut' the sausages into bite sized pieces in the cooking pot easily as they are very tender and easy to do so then.

We have never tried this combination before. The whole Family loved it and the suggestion of additional cream to mellow it out worked beautifully. I will be trying this recipe with Chicken but I’m sure it will work fine. Thank you Paulene for another taste sensation.

So easy and the whole family licked the bowl! When I make them again, I think Iโ€™ll add some green beans and/or broccoli at the end too so it has some crunch, but this will go on rotation now. I doubled the recipe for our family and it worked well.

I was a bit concerned about using mango (I don’t like it), but couldn’t taste it at all. This is a lovely, mild, curry … reminiscent of the curried sausages my mother used to cook in the 1970s!

You’ll be ok Sharon ๐Ÿ™‚

I forgot to get spring onions, would this spoil the dish if left out?

Used 24 sausages, and added minced ginger and extra curry powder. I make this at least once a week, everyone raves about it!

Great flavour and super easy. Put extra curry powder in.

Sure .. if fillets I’d reduce time to around 4hrs for chicken or keep it around 5hrs for boned pieces

Made this tonight and it was amazing! The flavour combinations were perfect. You could taste everything and nothing was overpowering. I didnโ€™t even need to reduce the curry, it wasnโ€™t too spicy for our taste buds at all. Going to try it with chicken next. It was actually my 8 year old that suggested that!

Just made this tastes beautiful thanks for recipe

It’s probably enough liquids to cope with extra sausages but if you want lots of sauce you certainly could double it ๐Ÿ™‚
Bearing it mind it may need a little thickening at the end possibly

Pauline, would you double all of the ingredients if you used 24 sausages? Ta x

If I choose to use fresh mangoes instead of canned, would I need to add any sweetener? My husband and I are both diabetic so fruit in syrup is out. I was thinking something like stevia to sweeten it.

A family favorite! The adults love it as well as the kids. Mr fussy 2 year old is catered for as we pull his sausages out whole and wipe the sauce off if his ones so they are plain.
We also add carrots at the start so there are nice soft pieces for the one year old.
