Mango Coconut Curry Sausages
A family friendly, mild sausage curry packed with flavour everyone will love!
Serving: 6
Ingredients
- 12 thin sausages of your choice
- 1 onion diced
- 1 x 425g can of mango pieces in syrup
- 1 x 400ml can coconut milk
- 1 tablespoon minced garlic
- 1 tablespoon curry powder (I use Keen’s)
- 1 tablespoon cornflour
- 1 cup spring onion/shallots sliced
Instructions
- Place raw, whole sausages and diced onion in slow cooker
- Using a stick blender or food processor blend mango and syrup to pulp
- Add coconut milk, curry, garlic, and cornflour to the mango pulp and blitz again until all combined well
- Pour over sausages and cook on low for 5hrs 30mins
- In the last 30mins add sliced spring onions/shallots
- Total cooking time 6hrs on low
Notes
- This is a medium curry heat. You could halve the curry powder to reduce it to mild. Alternatively we took out our children’s serves and just mixed through a half a cup of pouring cream to theirs to reduce the heat to mild before plating them, and then left ours as it was as medium heat.
- Our children enjoyed theirs served with brown rice, the adults enjoyed theirs served with mashed sweet potato
- In the last hour or so of cooking time I use a plastic egg flip or spoon to ‘cut’ the sausages into bite sized pieces in the cooking pot easily as they are very tender and easy to do so then.

How much fat cane ourif the sausages? Would it bebetter to parboil first. I have never done sausages in slow cooker before.
I personally NEVER pre cook my sausages before slow cooking them 🙂

A family favorite! The adults love it as well as the kids. Mr fussy 2 year old is catered for as we pull his sausages out whole and wipe the sauce off if his ones so they are plain.
We also add carrots at the start so there are nice soft pieces for the one year old.
Beautiful I made it the other night had it with mashed potatoes as I don’t eat rice, beautiful the next day as well.
Can you add frozen veg to this and it still taste as good also I could only find a jar of mangoes (685g) in syrup would that still be ok

The kids had seconds! An absolute winner. I used 2 tins of mangoes and 1 tin of coconut cream. Such a beautiful thick sauce.
This is such a family favorite. Its not to sweet or spicy, its the perfect blend. I serve with mash potato or rice or even just some steamed vegetables. So yum.

Cooked this tonight so easy and quick to do, backed off on the curry a little. A hit with family so will make it again and might try chicken as well

Family favourite, kids eat this dish no fuss. I half the curry powder so it isn’t so spicy. Trying it with chicken sausages for the first time today.

If I choose to use fresh mangoes instead of canned, would I need to add any sweetener? My husband and I are both diabetic so fruit in syrup is out. I was thinking something like stevia to sweeten it.

It’s probably enough liquids to cope with extra sausages but if you want lots of sauce you certainly could double it 🙂

Made this tonight and it was amazing! The flavour combinations were perfect. You could taste everything and nothing was overpowering. I didn’t even need to reduce the curry, it wasn’t too spicy for our taste buds at all. Going to try it with chicken next. It was actually my 8 year old that suggested that!
I don’t have a slow cooker, but I am going to try this out in my oven on a low Temperature.

Sure .. if fillets I’d reduce time to around 4hrs for chicken or keep it around 5hrs for boned pieces

Used 24 sausages, and added minced ginger and extra curry powder. I make this at least once a week, everyone raves about it!
i normally cook normal curried sausages and there are always some left. cooked the mango coconut curried sausages tonight and not one sausage or sauce was left the kids loved them that much must admit i will neever go back to normal curried sausages

I was a bit concerned about using mango (I don’t like it), but couldn’t taste it at all. This is a lovely, mild, curry … reminiscent of the curried sausages my mother used to cook in the 1970s!

had these very nice the sausages I used were not very nice though I got from the butcher would super market ones be better the sauce was delish

So easy and the whole family licked the bowl! When I make them again, I think I’ll add some green beans and/or broccoli at the end too so it has some crunch, but this will go on rotation now. I doubled the recipe for our family and it worked well.
We have never tried this combination before. The whole Family loved it and the suggestion of additional cream to mellow it out worked beautifully. I will be trying this recipe with Chicken but I’m sure it will work fine. Thank you Paulene for another taste sensation.

The best curried sausages I have ever made.silky smooth . Served with garlic skinned potatoes and Brussels. Even added carrots to the sausages. Partner loved it.

Made this for the first time yesterday, family loved it, especially 2 year old grandson who had seconds! I used chicken sausages and added extra curry powder, also added veggies: potato, carrots and green beans. Served with shallots, chopped red chilli and coriander for the adults. Delish ?

I substitute the sausages for chicken sausages or boneless chicken thigh.
I also add diced capsicum in the last hour of cooking.

Firstly I don’t even like Mangoes. I’ll go as far to say that I hate Mangoes! But this is AMAZING. On the regular rotation at our house, everyone loves it. I add sliced carrots and we always have it with Jasmine Rice. It’s a winner!

Can the ingredients be doubled to make a larger batch
Sure, just be sure you are using a large slow cooker though as with 24 sausages and all the rest it will be very full once doubled
Great recipe. As usual, followed the recipe first time and have made some changes: for last 3 hours, added half cup uncooked rice and one cup water..
I have also substituted 750g bone-in skinless chicken thighs for the sausages.

Was needing a curry sausage recipe and this one came up . I’m always up to test and try out new foods /recipes on the husband lol …. This was so yummy even the 5 yr old grandkids gobbled it up in record time . This one is another favorite for sure . Will try it with diced chicken thigh next time .
