Coffee and Date Cake
An absolutely moist and delicious cake, great with a nice cup of tea or coffee.
Equipment
- 3.5L slow cooker
- Silicone cake dish/loaf pan
Ingredients
- 375 grams pitted dates
- 2 tsp instant coffee (dry)
- 1 cup boiling water
- 1 cup sifted self raising flour
- 1/4 cup slivered almonds
- Butter to grease cake dish (or you can line with baking paper)
Instructions
- Put dates in bowl. Add coffee to boiling water, stir to dissolve.Pour coffee into dates, stir well and cover.Let sit overnight.
- Next day, add flour and mix well.
- Butter silicone dish well and pour mixture inDip small teaspoon in hot water to smooth the mix out to the edges. Sprinkle almonds on top.
- Add hot water to slow cooker bowl. The cake tin will sit in this water.Put cake dish in, tea towel under lid and cook on High for 2.5 hrs or until skewer comes out clean. (Tea Towel Trick explained here)
- Remove from slow cooker bowl, place cake on rack to cool for 5 minutes, then take cake out onto serving plate and cut into serves
- Note: This recipe was cooked in a vintage Monier cooking. Times may vary with more modern cookers so check during cooking for your slow cookers best time.
