Portuguese Chicken - Low Carb

A recipe I created for my low carb loving wife to surprise her with a lovely dinner xx

Total Time 3 hours 45 minutes

Ingredients
 

  • 1 tsp cracked black pepper
  • 1 red chilli, deseeded and finely chopped
  • 1/2 tsp paprika
  • 2 tsp crushed garlic
  • 1 tsp fine grated orange rind
  • 1/4 cup of fresh squeezed orange juice (or good quality 100% bottled juice)
  • 2 tbsp red wine vinegar
  • 1kg skinless chicken thigh fillets (whole)

Instructions
 

  • Place pepper, chilli, paprika, garlic, rind, orange juice and vinegar in a bowl and combine
  • Add thighs to bowl and coat thoroughly
  • Remove thighs but reserve the liquid
  • Seal thighs in searing slow cooker or on stove top
  • Add thighs to slow cooker if not already in one and pour over reserved liquid
  • Cook on HIGH for 3.5hrs
  • Serve with salad of your choice for a great LOW CARB meal 🙂

    Would chicken breast work as well ? Totally overwhelmed with thighs as feel I have to cut all the “bits” off!

      Sure you could
      I prefer thighs as they are juicier in slow cooking (and I don’t cut any bits off lol) but by all means use breasts if you prefer 🙂

  2. Very easy to cook. I used 1 tsp of sriracha sauce instead of a chilli. The flavour was delicately spicy and citrussy. Very nice with a salad
