Meatloaf

Meatloaf

Ingredients
 

  • 2 eggs
  • 2/3 cup bread crumbs
  • 3/4 cup of milk
  • 3/4 packet French onion soup
  • 1 teaspoon of keens curry powder
  • 1 teaspoon of minced garlic
  • 700 - 1000 gms Beef Mince ( pending on how big your tin is )
  • - 1/4 cup tomato sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon mustard
  • 1/2 teaspoon Worcestireshire sauce
  • 1/2 red capsicum
  • 1/2 green capsicum

Instructions
 

  • Combine eggs, milk, bread crumbs, garlic, capsicum and dry soup mix in a large bowl.
  • Crumble beef mince over mixture and stir well to combine.
  • Shape into a round loaf; place in a baking paper lined rectangle tin in the cooker.
  • Cook on Low for 3 1/2 hours - 4 hours.
  • Whisk tomato sauce, brown sugar, mustard, and Worcestershire sauce in a small bowl, spoon sauce over meat loaf in the last 20 mins.
  • Let stand for 10 mins before serving ?

      Yes you can 🙂
      If you slow cooker is a ceramic bowl I add 2cm or so of water in the bottom then sit the pan in that to lower risk of cracking the bowl

    This was absolutely delicious! I didn’t have curry powder so used a North African spice mix instead. Also didn’t have French onion soup mix so used spring vegetable soup mix. Such a moist meat loaf. Put it together the night before and left it covered in fridge with instructions for hubby to put it in sc at midday…now he’s claiming he cooked it!! Sorry I couldn’t take a photo it all just disappeared!!

  4. Can you add more veggies to it.? Carrot baby spinach etc so kids get more nutrition

    Made this tonight. Had left out grern capsicum, grated carrot instead & some diced onion. Had 1.2kg of mince. After adding veg was too big for a loaf tin so shaped into loaf & cooked in oven bag ontop of fol balls with some water in bottom. Perfect we love it

  6. Am I right in thinking the curry powder would go in the meatloaf rather than the sauce?? Also, if I have a ceramic bowl and add water to the bottom, does the meatloaf tin need to sit up eg on egg rings?? Many thanks for advice….(still a newbie!)

      Yes I would add it to mince 🙂

  7. If your placing the meatloaf in foil tin and putting straight into slow cooker do you still need water or would it be okay?

      If it’s a ceramic cooker, some like to still add water just to avoid dry cooking 🙂
      In a metallic searing type cooker it’s not so much an issue but you definitely still can

  8. I made this tonight for dinner but I added a cup of mixed frozen veg of peas corn and carrots. Fussy toddler loved it so it will be on our menu again

    This is a great meatloaf recipe to use as a crisper clean out, I added celery, grated carrot, capsicum, dehydrated spinach. Did use for the soup mix my own mix, over all a great recipe to keep in the rotation of things.

  10. Hi Pauline, when you say place in a tin do you mean a baking tin? Or would you recommend the silicone loaf one? I have just purchased the sunbeam searing slow cooker, thanks to your review I’m loving it.

      While this one isn’t one of my own recipes Tracy, I do use a silicone loaf pan for my meatloaf xx

    Made this this morning. So quick and easy to put together, had to leave out capsicum. Smells nice and tasted good will definitely make again
