Hearty beef stew!

Ingredients
 

  • 3 Tbsp olive oil
  • 1kg cubed chuck steak (3cm cubes)
  • 1 med onion diced
  • 3 cloves garlic, minced
  • 1/4 cup red wine
  • 3 cups real beef stock
  • 2 Tbsp Tomato Paste
  • 1 tbsp worcestershire sauce
  • 1 1/2 tsp sugar
  • 1/2 tsp smoked paprika
  • 1/2 tsp salt
  • 1/2 tsp cracked pepper
  • 8 small red potatoes, quartered
  • 4 small carrots, cut into chunks
  • 1 celery stalk sliced, leaves as well
  • 1 small zucchini, cut into chunks
  • 1/4 cup diced red capsicum
  • 2 Tbsp cornflour (To thicken at the end)
  • FRESH HERBS (If using dry herbs 1/2 the amounts or use 1 1/2 tbsp mixed herbs)
  • 1 tbsp sage,
  • 1/2 tbsp thyme leaves
  • 1 1/2 tbsp each of oregano leaves, garlic chives, chives roughly chopped.
  • 3 bay leaves
  • About 12cm stalk of rosemary or 1 tsp dried.
  • 3 tbsp finely chopped parsley (Add at the end of cooking time)
  • Crusty bread (optional)

Instructions
 

  • Heat oil in large pan or in slow cooker bowl ( If it has a sear mode) on medium-high heat. Season beef. Working in 2 batches, brown meat on all sides, 6 minutes. Remove to plate.
  • Add onion to pan/bowl and reduce heat to low. Cook, stirring, until softened, 3 minutes. Add garlic and cook, stirring, 1 minute. (If using a pan after the 1 minute mark pour in some of the beef stock to deglaze the pan & pour in to slow cooker bowl. (The rest of the directions are for the slow cooker only)
  • Pour in wine. Add stock, tomato paste, Worcestershire, sugar, paprika, salt, and pepper.
  • Return beef to slow cooker bowl add vegetables & herbs (except parsley). Stir well. Cook on low 7 hrs
  • Remove rosemary stalk & bay leaves, if needed thicken with cornflour mixed in 1/4 cup water and let cook for another 5 minutes..Add parsley & season to taste if needed.
  • Serve with some crusty bread.
  • You could cut the meat smaller if you like and add what ever vegetables you have on hand. You can also skip the browning sections and just put everything in the slow cooker to save some time.

  1. This smelt so good as it was cooking and was yummy to eat too. I used the mixed herbs option instead of all the fresh herbs. I would say this recipe makes 4 generous servings. I will make it again.

  3. This will be my only stew recipe from now on. I used mixed herbs instead of fresh. This fed a family of 5 including two teenage boys, with enough for a generous lunch for one the following day . I also chose to brown the beef beforehand as I had the time to spare, but will try just throwing everything in the slow cooker next time to see how that goes.

  8. Easy to make tasty to eat and warm ip the tum on these cool miserable nights.
    Seved woth thw xrusty bread and a glass of red
    Issd mixed not drsh herbs and omitted the salt and sugar. Taste was still amazing
    Only problem i had was it didn’t thick up well

    I am trying this for the first time today. I omitted the capsicum as my family aren’t big fans of it and also used dried mixed herbs. I am hoping to get to the shops to get some crusty bread rolls before its ready. It already smells divine.

    Followed this recipe to a tee minus the chives. It was delicious! However, like other comments, it wouldnt thicken up. I added 3 TBSP cornsflour and let it cook for half an hour but it only thickened very slightly. Still yummy despite this.

  14. I have been looking for a real beefy meat stew.. im not a fan of tomatoes and all that sort like they kind of stew my mum use to make when i was little I wonder if this could be like it … looks good

  15. Delicious! I was missing paprika and left out garlic and onion (used garlic oil to brown the meat) for a low fodmap version. Yum!

  17. Made this for my husband and father in law who both don’t like ‘wet food’. They absolutely loved it! And by far my favourite stew! I left out the capsicum and zucchini as my husband hates them but it was still amazing! Frozen the leftovers and it will be making my regular rotation!

    This is a firm favourite in my house. Tow of us here and we get 2 days worth of dinners. I use 2 beef stock cubes and 2 & 1/2 cups of water, if any more is needed you can add it at the end. I just bung everything in the cooker and stick it on high for 4 hours. Lip smacking on a cold day!!

    This recipe is so good. I prepared it and had it in the slow cooker all night. The house smelt divine. My children got out of bed at night to try find what the delicious smell was. There is enough stew for two night’s meals. My family have said this is a “must make again” recipe.

    I have just purchased my slow cooker and must say I love this group. Last night I had the Beef Stew and it was so good I will definitely be making it again lots of flavour and so warming on a cold winters night and better still have left overs for another night.

    Oh my Lord!!! My go to beef stew recipe. Hubby loved it and so did I. Full of flavour, I also added peas to this, love my peas. I didn’t have time to brown the meat, as I was running late for my appointment. I just threw everything in and hoped for the best. I didn’t use salt or pepper. Replaced wine with stock. Another meal on repeat ? ??????

    A great beef stew. I used extra beef stock instead of red wine, and added some chopped sweet potato as well as frozen peas, beans and corn. Didn’t put in the capsicum or zucchini.

    Hubby’s feedback after eating this meal for the forth day in a row…

    This recipe is definitely a keeper!

    I added everything in the recipe, plus pumpkin, broccoli, cauliflower, frozen peas and silverbeet. You could also add corn, green beans, mushrooms – the list is endless! Went with the mixed herbs option, with some fresh oregano from the garden.

    I had 1.5kg of diced beef, so added extra sauce ingredients to fill my 6L cooker.

    I did change a few things, no wine, and only had potatoes, celery, carrots sweet potatoes lots of garlic and I used vegetable stock, everyone licked their bowls ✅

    Next time I’ll withhold zucchini and the capsicum, and add less stock (i didn’t add wine but added 1L stock).

    Oh my goodness could have just put the bowls back into the cupboard they were wiped that clean even our 10 year old fussy granddaugher. So so good this will be my go to stew

  30. Whole family really enjoyed this one, will definitely make again!
    Only changes I made were to add a Continental Stockpot Sensation – the Red wine flavour, as I didn’t have any red wine, also added less stock (maybe 1/2-3/4 cup less) as I read the comments about not being thick. I added some extra veg too as I was cleaning out my crisper, so put in some sweet potato and green beans. I added the beans after about 4 hours. When I make again this is when I would add the zucchini as it had disintegrated this time (being cooked for 7 hours).
    I did still add a cornflour slurry in the last hour, and turned the SC up to high and the gravy thickened nicely.
    Going to use the leftovers as pie filling 🙂
