Apricot & Mustard Pork Chops

This tasty pork chop recipe is great for the whole family to enjoy 😊

Equipment

  • 6-7L Slow Cooker – see notes

Ingredients
 

  • 6 pork chops of your choice – we used medium loin chops
  • 1/2 cup apricot jam
  • 2 tbsp Dijon mustard
  • 1 tbsp Wholegrain mustard
  • 1 tbsp Fresh chives, diced

Instructions
 

  • Combine jam and mustards and mix well
  • Lay chops out on clean surface and using pastry brush or spoon and half of your total sauce mixture, coating one side of each chop, spreading evenly over each one.
    Lay this coated side face down in slow cooker
  • Use remaining half of the sauce to coat the top side of the chops.
  • Cook on low for 4hrs (depending on thickness of your chops) using tea towel trick
  • Sprinkle with chives and move to serving plates
    Add a spoon of the sauce over each chop once plate

NOTES

  • While we do one single layer of chops in our 7L slow cooker, you can do as many chops as you need to for your family.
    Alternate their position during cooking if layering to get nice sauce/colour coverage on all + increase time slightly if more than one layer is being cooked at once

    What a great recipe! I wasn’t sure of the mix of jam and mustard, but it was delicious. This is a must try if you are considering it. I used pork steaks and they fell apart after 4 hours. Everyone enjoyed it and agreed to have again. I served with green veg and whole baked potato which was great to soak up the sauce.

  4. Very tasty. Minimal ingredients. I will definitely be cooking this dish again. I forgot to use the tea towel method and it still worked. Will use the tea towel method next time

    This was really tasty. I’m tempted to try using chicken pieces next time. Really easy recipe and not a long list of ingredients so budget friendly.
