Apricot Chicken Meatballs
An absolute classic in a new delicious form. The whole family will love it!
Equipment
- 5L slow cooker
Ingredients
Chicken Meatballs
- 1 kg Chicken mince
- 1 tbsp olive oil
- 1 Egg
- 1 tsp Chicken stock powder – I always use Massel brand
- 1 tsp Dried thyme
- 1 tsp dried rosemary
- 1 tsp Minced garlic
- 1 tbsp fresh chives, chopped (some reserved for garnish)
- 1/2 tsp Pepper
- 2/3 cup dried breadcrumbs
Other Ingredients
- 1/3 cup plain flour
- 400 ml apricot nectar
- 40 gram sachet of French Onion Soup (dry)
Instructions
- In a small bowl, add the flour and set this bowl aside ready to roll your finished meatballs in.
- Combine all the meatball ingredients in a large bowl and mix really well to combine.
- Roll into approximately 20 meatballs. As you roll each one dust lightly in the flour and place them gently into the slow cooker.
- Combine apricot nectar and French onion soup and pour gently over meatballs
- See our SLOW COOKING MEATBALL TIPS HERE!!
- Cook on LOW for 3hrs with "Tea Towel Trick" in place.
- We served ours with creamy mashed potatoes and steamed vegetables such as green beans & carrots, with a garnish of fresh chopped chives scattered over the top to serve.

when do you add the apricot necter and soup mix
Pour it over the meatballs once they are in the slow cooker Becc 🙂
Great to see advice re substitutions – looks like meatballs and a variety of simmer type sauces will be good for a 3 hour cook time. Veges could be added to that as well.
loved this and so easy. rather than the various herbs, I used the “mingle” brand garlic and herb mixed seasoning and used gluten free breadcrumbs and flour.
Thanks for taking the time to leave your review Leanne – so appreciated! 🙂
Tried this tonight since apricot chicken was a favourite with us many moons ago. Did not disappoint. I doubled the recipe and found it did not have enough sauce so I removed the tea towel for the last hour or so to make more liquid. Love loved loved it. ❤️ served with mash and veggies but would be good with rice as well
So happy to hear this!!
