Apricot Chicken Meatballs

Ingredients
 

Chicken Meatballs

  • 1 kg Chicken mince
  • 1 tbsp olive oil
  • 1 Egg
  • 1 tsp Chicken stock powder - I always use Massel brand
  • 1 tsp Dried thyme
  • 1 tsp dried rosemary
  • 1 tsp Minced garlic
  • 1 tbsp fresh chives, chopped (some reserved for garnish)
  • 1/2 tsp Pepper
  • 2/3 cup dried breadcrumbs

Other Ingredients

  • 1/3 cup plain flour
  • 400 ml apricot nectar
  • 40 gram sachet of French Onion Soup (dry)

Instructions
 

  • In a small bowl, add the flour and set this bowl aside ready to roll your finished meatballs in.
  • Combine all the meatball ingredients in a large bowl and mix really well to combine.
  • Roll into approximately 20 meatballs. As you roll each one dust lightly in the flour and place them gently into the slow cooker.
  • Combine apricot nectar and French onion soup and pour gently over meatballs
  • Cook on LOW for 3hrs with "Tea Towel Trick" in place.
  • We served ours with creamy mashed potatoes and steamed vegetables such as green beans & carrots, with a garnish of fresh chopped chives scattered over the top to serve.
