Smoky Maple and BBQ Hassleback Chicken

Ingredients
 

  • 4 large skinless chicken breasts
  • 4 rashers of maple flavoured streaky bacon
  • 4 slices of extra sharp cheddar cheese
  • 1 cup of smoky bbq sauce
  • 1 tsp smoked paprika
  • 1 Tblsp maple syrup
  • Optional: Cornflour to thicken

Instructions
 

  • Carefully place 4 slices along each breast fillet, cutting almost to the bottom of fillet but not quite
  • Cut each rasher of bacon into 4 slices and each slice of cheese into 4 triangles
  • In each of the 4 cuts in the chicken place one piece of bacon and one triangle of cheese
  • Combine sauce, paprika and maple syrup and pour into bottom of slow cooker
  • Gently place filled chicken fillets into cooker to sit in sauce
  • Cook on LOW for 4 hours
  • Serve with as much of the cooking sauce (or none) as you prefer
  • We often thicken our sauces with a little cornflour slurry for thick syrupy consistency 🙂

    I loved this dish, this recipe is also from Book 5 – Family Favorites, i followed the recipe along with the steaky maple bacon, it was so delicious it is a must do, this dish will become a regular on our menu, will definitely make this again 10/10

    This is SO GOOD! It’s not often that I get a full house of positive feedback on my cooking but this recipe definitely nailed it for all 4 of us.
    I left out the paprika as we had none and just used the cheese and bacon I had available – it was delicious!
    Served with garlic bread and wedges for a quick and tasty meal.

    Very nice. Hubby loved the flavours. Used honey ham as the maple bacon was sold out. Also used smokey cheese slices. Rich and sweet flavour. Only cooked for 3 and half hrs, the chicken was very tender.

    Cooked this for the first time on the weekend , husband and sons loved it. I used normal streaky bacon and ‘Cheer’ burger cheese slices , otherwise followed the recipe exactly. My boys want to try the same recipe with ribs next time. Winner!

    Made this for the first time. Used Camel cheese and Honey BBQ Rum Sauce as that was all I had. The rest of the recipe was the same. It was awesome. Will definitely make again. Have past on this recipe to my daughter to try.

  9. I made this for the family but used plain streaky bacon as couldn’t get the maple . Everyone liked it my son LOVED it . Was tasty and served with Mashed potato and veg. Will make it again.

  10. What would the cooking time difference be if I used thigh fillets instead of breast meat??
    Or don’t you recommend using them in this recipe??

      Being not as thick, the thigh would probably cook a smidgen less time – maybe 30 mins less
      The only other issue I see is that being much thinner the thigh fillet would be harder to form the cuts to fill

  11. Hi just wondering if I could leave the cheese out as one family member is extremely dairy intolerant

  12. It was really nice. The only thing I would do is cook it less. It only needs 3 1/2hrs as I found after 4hrs it was. Little dry. Definitely making it again

    Made this tonight for the first time, used normal streaky bacon and just plain cheese slices that I already had in the fridge.
    I did thicken the sauce up prior to serving. It was a very easy and nice meal, served it with roasted sweet potato chunks and roasted broccoli, will definitely be having this again!

    I finally made my first hasselback,I have seen potatoes done this way also and just thought that looks too difficult silly me! I saw a hack to place a chopstick either side of the breast when cutting the suits so you don’t go through to the bottom that worked a treat!! the dish was super tasty and smelt amazing! just a little dry,perhaps 3 nd half hrs cooking next time.

    It was easy to put together, but packs so much flavour – I didn’t have maple bacon, but it didn’t matter…
    so so so soooooo so very delish!
