Smashed Potatoes

Smashed Potatoes

Ingredients
 

  • 12 baby red/russet potatoes
  • 200g diced bacon
  • Herb and Garlic seasoning/salt
  • Fresh chives, diced
  • 2T butter
  • 1 cup grated tasty cheese

Instructions
 

  • Lay down a sheet of non stick baking paper in slow cooker
  • Place whole baby potatoes in single layer, spaced out in slow cooker
  • Cook with tea towel trick in place on HIGH for 2.5hrs or until tender when tested with fork
  • Pan fry bacon for 10mins until crispy
  • Using a potato masher, smash down each potato top to about half way down
  • Top each smashed potato with a ½ tsp of butter, cooked bacon, seasoning, chives and finally cheese
  • Continue to cook on high, with tea towel still in place, for 20 minutes more or until cheese melted through
  • Use an egg flip to carefully lift out each topped potato to plate

Notes

  • You can make as many as these tasty potatoes as you need or can fit in your slow cooker but I have based the measurements on 12 baby potatoes to serve 6 people.
  • We have these as a perfect side dish to a BBQ night!
  • You can also vary the toppings to anything else you may like so you never have to have the same versions more than once if you don’t want to!

  2. Just cooked tonight used bacon, mushrooms, carrot ,garlic and onion. A dollop of tomato paste on each spud then cheese. Bloody fantastic!!! My 2 toddlers ate as a meal, hubby and I had steakand corn cob as well but honestly this alone would be amazing as a light meal . Have shared my thoughts all over social media and will be back for more recipes!

    Made this tonight & added chopped onion to the bacon. Next time I will try a dash of cream on them. So yummo.

    I made these the other night, I mixed cream cheese, grated cheese, bacon and chives in a bowl and then spooned on top of each potato instead of butter and they were amazing ?

  6. Do you need to cook the bacon or could you put it on raw like when you do hot dogs?

      You can add them raw, they just won’t have that crispy bacon finish 🙂

    Had these last night with steak and kebabs. We all loved them, topped with sour cream/sweet chilli sauce.. will definitely be a regular in our house

  11. Soooooo delicious and simple <3 Followed the directions to a tee, used the toppings per recipe and they were delicious and perfectly cooked. Highly Recommend what a great little side dish.

  12. Didn’t have any chat potatoes so just used 4 large ones, peeled them all and chopped them into quarters, worked a treat. Added more bacon and it was a huge hit for the family. Will do it again for sure.

  14. Tasty as!! Reminds me of the times I had a potato from ‘the potato man’ at the show. (Not sure what his name was, I just called him the potato man.) I forgot the dollop of butter but think it probably needs it or something to make the potato not so dry. I will definitely be making these again though as a side, or easy lunch or tea.

  18. If you reduce the number of potatoes to 6 – does the cooking time change? TIA

    Excellent dish! Served as a side but would be plenty to have as a main. Topped with sour cream to serve. Toddler approved as well.
