Mexican Mince and Potato Bake
Serving: 4
Ingredients
- 1kg of washed potatoes, skin on
- 1kg beef mince
- 1 x 40g sachet Taco/Mexican seasoning
- 1 x 435g refried beans
- 2 cups grated tasty cheese
- Optional: Sour cream to serve
Instructions
- Roughly chop washed potatoes into sections approx. the size of half a golf ball each
- Cover base of 5L slow cooker with these potato pieces
- In a large bowl combine mince, seasoning and refried beans and mix well
- Add mince mix over potatoes and smooth top to flat
- Cook on low for 6hrs
- In the final 15mins add grated cheese to melt over top
- Serve with a dollop of sour cream for a one pot Mexican meal

I don’t like refried beans, what can I add instead?
They give a depth of flavour to this dish and a creamy consistency that really makes it 🙂 You won’t taste them individually in the final dish. Why not give it a go 🙂
Could I use sweet potatoes instead and would that change the cooking time? Thanks
You could and they would cook to soft a little faster than regular potatoes. I’d drop an hour or so off time 🙂
So easy and so tasty. I halved everything and used chicken mince. Yummy. Would make a great pie filler ?
Tried this tonight, it was a bit dry ( could have been my slow cooker) flavour was great. All of the family would like veg mixed through the mince so I will put some in next time
Had this tonight – easy dish to make and quite tasty, but next time I would add more taco seasoning for a little more of a hit.
Made this with a few different ingredients and it was delicious. Not a fan of beans in our house so changed it to a jar of salsa, also had green cap in fridge so added that to slowcooker. It was really good and will do it again. Yum.
Yum! I made it with pork mince instead and it was a hit. Will likely add a tin of corn and some chopped capsicum next time, it was a nice one pot meal.
This is a great easy dish that all the family loves. I added capsicum and onion for a bit more flavour.
I find it best served with some salsa and sour cream.
Simple, easy and tasty. One of those nights when everyone needed to eat at different times. So quick to put together, minimal ingredients. Served with salsa, guac and tortilla chips.
