Mexican Chicken Drumsticks
Serving: 2
Ingredients
- 4 drumsticks
- 1 can of diced tomatoes
- 1 onion- small dice
- 4 potatoes- large dice
- 2 carrots- large dice
- 3 tsp taco spice mix
- 1/4 tsp Mexican chili powder
Instructions
- -Mix tomato, onion and spices together in a bowl
- -Put potatoes and carrots on bottom of SC
- - Put drumsticks on top of the veges
- - Put tomato mix on top of drumsticks
- Cook on high for 3 hours.

I doubled this for the family and still waiting still raw at 4hrs on high
If you’ve doubled it and only added 1 extra hour Melissa to the 3hr original time that would be why … you have a lot more chicken to cook and it will take longer than one extra hour 🙂
Can you substitute for chicken breast?
Would you leave them whole or cube it?
How would that change the timing?

You could, but be mindful breast will give a more dry result (than for example thigh fillet would or drumsticks)
Breast should be cooked minimum times, closer to 3hrs low is plenty
However this recipe includes large cut potato and carrot – so if you intend to decrease time/temp for breast I’d suggest keeping them MUCH smaller cut – or perhaps even giving them a headstart before adding the chicken 🙂
