Lemon grass pork curry

Ingredients
 

  • 2x 10cm sticks of lemon grass chopped coarsely
  • 3 coves of garlic quartered
  • 4cm piece of fresh ginger grated
  • 1 small red chilli deseeded and sliced finely
  • 1 teaspoin ground turmeric
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon ground cardamom
  • 3 fresh kaffir lime leaves shredded thinly
  • 1 red onion diced
  • 1/2 cup water
  • 1 kilo pork neck chopped coarsely
  • 1 tin of coconut milk
  • 1 egg plant cubed
  • 2 carrots cut into sticks
  • 1 tablespoon of fish sauce
  • 2 tablespoons of lime juice
  • 1/4 Leek, sliced
  • 1/2 red capiscum cut roughly

Instructions
 

  • Blend or process lemon grass, garlic, ginger, chilli, lime leaves, chilli, water and the rest of spices until mixture is smooth.
  • Place everything in slow cooker and cook on low for 6 hours

    A mild curry we had it with rice, I would use more spice next time as we are feeding adults

    I agree this curry lacked flavour. I used beef. Half way through I added double the spices & still not so much flavour so ended up adding some of my Malaysian curry powder. Was worth it for the end result.
