Serving: 6
Prep Time 20 minutes
Cook Time 7 hours
Total Time 7 hours 20 minutes
Servings 6

Ingredients

  • 2 large potatoes, cut into large bite sized chunks (approx 1 cup)
  • 3 carrots, sliced (approx 1 cup)
  • 1 medium sweet potato, cut into large bite sized chunks (approx 1 cup)
  • 1/4 butternut pumpkin, cut into large bite sized chunks (approx 1 cup)
  • 1 large onion, diced
  • 200g green beans, chopped
  • 1 cup frozen green peas
  • 1 x 400g can chopped tomatoes
  • 1 x 420g can condensed tomato soup
  • 150g fruit chutney (I use the Rosella jar brand)
  • 1 tsp curry powder
  • 1 tbsp worcestershire sauce
  • 1 Tsp Vegemite
  • 1-1.5kg of chunk steak or similar casserole beef diced
  • 2 tsp flour + salt and pepper to season

Instructions

  • Add all the vegetables to slow cooker and mix to combine
  • Combine tomatoes, soup, chutney, curry, sauce and vegemite in bowl, ,mix well and set aside for now
  • Add diced beef to large plastic bag with seasoned flour and toss to coat beef in flour. Add beef to slow cooker on top of vegetables
  • Pour over the tomato mixture and stir to combine.
  • Cook on high for 7hrs (see notes)
  • Serve with crusty buttered bread

Notes

  • You can vary vegetables to what you have on hand. This is a great 'empty out the vegetable crisper at the end of the week' type of recipe 🙂
  • This fills a 6L slow cooker to the top, hence the long and high cooking time to achieve tender results. You could also cook on low all day (I'd estimate approx 10hrs at least, so great for working families cooking from morning until home time)

Wow – I’ll definitely try this on weekend. Thank you Paulene. Will freeze portions & have casserole on hand with mash potato or pasta ?

  2. Nicole Lovell September 5, 2020

This is an absolutely delicious meal and we have plenty of leftovers. My husband had a massive bowl and wanted seconds as well

  3. Natalie Dodds September 5, 2020

Loved this recipe and so did my family! I left out the peas but added corn, celery and some mixed herbs. Surprisingly, it didn’t taste of tomato! Such a versatile recipe! We also had plenty of leftover which I added mashed potato and cheese on top of for a second meal. Budget friendly!

  4. Silvana Williams September 11, 2020

I am not big on making casseroles, but this was so tasty and full of flavour, my husband loved it and so did I. Will be making this one again.

  5. I have made this recipe 3 time now. It is very tasty and budget friendly. We always have plenty of leftovers for lunch days after making it. It reheats really well aswell and it is delicious!

  6. I tried this recipe for the first time and my son and I both loved it, nice consistency. Did not use peas but put corn instead. Used chuck steak, melt in thy mouth yum!!

  7. Very nice. Plenty of left overs also for work lunch. Served with mashed potato. Will definitely make this one again.

  8. Some word related feedback….. tasty, comfort, hearty, veggies, seconds, leftovers, YUM!

  9. Felicity Thambyah February 6, 2021

Absolutely delicious! Mine only took 6hrs on high in sunbeam cooker. I served with some rice.

  10. Marilyn Salmon April 15, 2021

I tried this for the first time yesterday, and it was the best beef stew I’ve ever made. It was perfect for all day cooking while I was at work, and the flavour was amazing. Thank you!

  11. Wow what an absoulutly butifall casserole a winner with us all and the kids lived it served with crusty bread yummy

  12. Maria Mihailidis April 19, 2021

This recipe is a winner. Made this 6 days ago. I changed 1 ingredient from condensed tomato soup with crushed tomatoes, followed the rest of the recipe. Will be making it regularly.

  13. Made this yesterday, left out peas and corn and added red capsicum, celery and some mixed herbs. This is the best stew I have made and the family loved it. Served it with crusty breadstick.

  14. Julie Buhagiar April 20, 2021

I’m making this tomorrow, will it make a huge difference without the fruit chutney, thanx inadvance ?

    1. Paulene @ Slow Cooker Central April 22, 2021

It definitely adds a light sweet fruity element to the finished dish but you could cook it without it 🙂

  15. I’m making this for the second time as it was a hit with my husband and kids and so easy! I just leave out the chutney and add a little brown sugar instead

  16. Yummmmmyyy. Great way to use up leftover veg. Very tasty base. We have with bread or sometimes I make & add cheesy dumpling 1.5h before it’s done. Very rarely are there any leftovers.

  17. June Smith June 8, 2021

Can you either substitute Worcestershire sauce for something else, or could you just leave it out altogether.

    1. Paulene @ Slow Cooker Central June 8, 2021

You could leave it out if you don’t have it 🙂

  18. If I left out the chutney & Vegemite, would it still be ok? Or is there anything else I could add to sub them?

    1. Paulene @ Slow Cooker Central June 16, 2021

Sorry I didn’t see this in time. If you left out the salty and the sweet it will change the final tastes. How was it?

  19. I made this today as I thought it was a great recipe, just changed a few thing (used French onion soup as a thickener). It’s looking good.

  20. I really love doing this casserole cos you can cram anything and everything in it! I use chuck steak for meat and the taste sensation…..wow!!!!

  21. My family loves the Hearty Beef sauce in a jar from the supermarket. Well I had beef at home but no sauce so I looked up beef sauce and this came up. I’m so happy to have found this. I had every single ingredient in my cupboard except the tomato soup. I didn’t leave it out, I just used a few tablespoons of tomato paste mixed with flour and then 400mls boiling water and then the other sauce ingredients. It tasted wonderful. I’m sure they are going to love eating it tonight. Thank you so much!!!

  22. Looking forward to lots of tasty meals here guys, mmm. Have purchased a slow cooker and a learner with this type of cooker.

    1. Paulene @ Slow Cooker Central March 21, 2022

I guess you could but my concern would be the meat would fall off the bone at this temp/time and you’d risk bones through your lovely casserole

  23. Narelle Duffy April 6, 2022

Hubby requested a beef casserole for dinner and this did not disappoint! I just used veggies I had so no pumpkin or sweet potato but added some capsicum and celery. I used about a quarter cup of homemade fruit chutney as that was all I had but the rest as per the recipe. Delicious! We just had it with toast to mop up the delicious gravy. ??????????

  24. Delicious!

I didn’t have tomato soup so added tomato paste, water and squirts of tomato and bbq sauce for sweetness..

  25. I’ve bought a ham hock. Do you think I could chunk s of this in. Not too much , just a few chunks??

  26. Yeah, it was alright. Only thing I didn’t do was to cut off all the fat from meat. Cause afterwards I found there was a lot of fat when cooked on surface. Yes I’ll have to skim it off.

  27. Hi. My husband has asked for a meaty soup – do you think if I blitzed this it would be a nice thick soup texture? Thanks ?

    1. Paulene @ Slow Cooker Central May 12, 2022

I’m not sure how the meat will go blitzed but if it all blitzes together ok, which I assume it will, it would certainly be nice and thick yes 🙂

  28. Jodi Woolnough May 15, 2022

This recipe was super delicious!! Exactly what we needed after a long day and so easy to make. I followed the recipe to the letter and it tasted amazing. Served with crusty bread. I will definitely make this again. Thank you.

  29. Hubby enjoyed it plus one of my “adopted child” as well. I added some minced garlic, I did accidentally drop my container with the sauce in while mixing and lost some so added a sachet of tomato paste and a extra table spoon of Worcester sauce to make up some liquid

  30. Natalie Jackson May 27, 2022

Delicious…at least my husband thought so, he didn’t leave me any, Definitely a winner.

  31. This was for sure soo tasty. I found it a little too sweet for me but I think I was a bit heavy handed on the chutney. The kids devoured it though so I can’t complain! Will try again with less chutney.
It is extremely saucey so you can go heavy on the veggies and meat and I needed to thicken with flour

  32. Lois Aitchison July 21, 2022

Thinking of cooking this over weekend. We are caravanning. Have 3.5L cooker, would be okay to 1/2 all ingredients & cook for half the time on low?

    Thanks ?

    1. Paulene @ Slow Cooker Central July 25, 2022

Hi Lois, while halving the ingredients should fit, don’t have the cooking time. It would still need around 6-8hrs for good tender results of meat and the hard veg

  33. Linda Musgrove July 27, 2022

Made this last week and it was absolutely delicious. My husband loved it and there was enough to freeze for another 2 meals for us 2. We had ours with a crusty bread roll as there was a lot of vegetables in the casserole.

  34. Elizabeth Menolotto July 28, 2022

Put on a batch before work yesterday and came home to the delicious aroma! Family were so excited by the smells and this did not disappoint! Because we were out all day, I popped it on low at 7.00am and came home just before 5.00pm and it was perfectly cooked. Will do this one again for sure, so easy, so delicious and so hearty!

  35. Trudi Fermaner August 4, 2022

Hearty Beef & Veg Casserole was delicious- My husband enjoyed it too!
    Highly Recommend this recipe.
    ?????

  36. Absolutely delicious. I used homemade relish in place of the chutney and let out the pumpkin and sweet potato due to personal preference. I cooked in low for 8 hours. It was super delicious and made enough for 2 meals for our family of four reasonable eaters. A loaf of crusty bread paired with it very nicely.

  37. Really tasty I put everything in that was in recipe but omitted the beans ( I hate beans) I added extra worstershire sauce and 1/2 cup of water and cooked over night . I am not much of a meat eater but meat was so tender, there was so much I gave neighbours some and made the rest into pies with mash potatoes on top delicious ?

  38. So good! Was eating this next to my 2 yr old grandson who ate his lunch and half of mine after tasting it?

  39. Fiona Broadbent August 9, 2022

Oh my goodness made this tonight and it was so tender and yummy. Will definitely be making it again.

  40. Michelle Edwards August 15, 2022

Yummmm Yummm, followed recipe to the exact ingredients and added in a can of champigon mushrooms in the last hour and half, have frozen 2 x 1.5 ltr containers and had a delicious dinner last night.

  41. Deb Kennedy August 18, 2022

Made this for dinner tonight. Used gravy steak and cooked for 10 hours on low. It was delicious and meat was super tender.

We had this last night with a very few alterations (hubby doesn’t eat pumpkin or sweet potato) and it was delicious. I used a large jar of passata sauce instead of chopped tomatoes. We score all our new recipes to know what to try again or not. We scored it 9 out of 10.

  45. Jenny parsons April 12, 2023

OOHHMMYY GOSH first time making this recipe. Simply full Of deliciousness in a bowl and only 1 sc to wash up. Big hit with hubby and he has now asked for it as a regular favourite. Giving it a 10/10.
The only extra thing I added was 2 teaspoons dried thyme as I love to use herbs to my cooking.
    Thanks Jenny P

Our whole entire family LOVED this healthy, nutritious, hearty meal and I was delighted to find we got 2 meals out of it for our family of 5! Bought me back to something a grandmother would have made. Real comfort food. We teamed it with a Vienna sourdough loaf from Coles.

  47. 5 stars
Absolutely amazing. I threw in some extra vegetables to the point it didn’t fit in the slow cooker. Ended up cooking it in the oven. The whole family thought it was delicious!

  48. Shirley Chadbone June 8, 2023

We had this last week. Everybody really liked it. I cooked it as per recipe and it was perfect.

  49. Wendy Hodkinson June 8, 2023

Loved it. I was nervous about cooking on high for 7 hours but it turned out perfectly. Super yummy with some crusty bread. Great amount for 2 meals for us. It would also work great to do some extra meals to freeze or pack for lunch through the week.

I made this for the 1st time last week. It was delicious. (Left out the chutney)
We didn’t get any left overs because we ate it all over a couple of days ?
    Very yummy ?

Note to self…..read entire recipe including notes BEFORE prepping. I only have a 3.5 litre slowcooker. Only meat, carrot, onion and sauce would fit. Will cook all other veg separate and do some mashed potato. Taste test and it is absolutely delicious. Will need to halve next time or buy a bigger slowcooker ?. I cooked on low as I was going to be out all day. House smelt divine on my return. Checked meat after 9 hours and it was so melt in the mouth tender.

Oh my goodness! Made this on a cold Melbourne day and it was amazing. I forgot to get a sweet potato but it was fine. Cooked on low for 10 hours, the last with the lid off to thicken a bit. Served with bake at home rolls. Was a real hit.

  61. 5 stars
Made this pot of ‘goodness’ last night. Leftovers tonight, so it will taste even better. Perfect served with a dallop of sour cream and crusty bread.

That’s great Meagan! Thanks so much for taking the time to leave your feedback for others 🙂

Super rich casserole. Flavours were amazing. I forgot to coat the meat in flour, however I cooked it low for just over 10hrs & the sauce was so thick that it didn’t matter.
I added in mushroom right towards the end but any vege could be thrown in.
Definitely will make again, whole family came back with clean bowls!

    1. Paulene @ Slow Cooker Central April 27, 2025

That’s so wonderful to hear Rebecca! Sounds like it was a hit with your family 🙂 Thanks so much for taking the time to leave your feedback 🙂

Love this recipe, so easy to prepare and cook.
Hubby and I just love it, a great hearty meal and always goes down well with other family when they are here. It’s one that gets cooked to take on our caravanning holidays. I flat pack all our meals in zip lock bags and this allows me to store 15 meals in the van freezer.
Please give it a go, you won’t regret it yummy!!!

    1. Paulene @ Slow Cooker Central August 15, 2025

What a wonderful review Margaret – thanks so much! 🙂

I made this the other night and it is totally amazing . I was going to freeze leftovers but there was legit nothing left . I even sent the recipie to my adult kids . I didn’t have beans but used cauliflower .

    1. Paulene @ Slow Cooker Central November 17, 2025

You can if you really wish to Karen – but I promise it lifts the dish to a new level if you keep it in! 🙂

Very very tasty, normally I stick to nannys braised beef recipe. For a change I decided on this one, wow so full of flavour, meat melted in my mouth , no need to thicken at all it was so perfectly thick and juicy. We now have a new favourite.
