Green Tomato Chutney

Green Tomato Chutney

This is a lovely chutney with a bit of a bite to it. Great for crackers

Servings 5 large jars

Ingredients
 

  • 1.4kg green (unripe) tomatoes, chopped
  • 3 onions diced
  • 2 tbs salt
  • 450ml Malt Vinegar
  • 2 cups brown sugar
  • 4 tsp turmeric
  • 2 tsp curry powder
  • 1 tsp grated fresh ginger
  • 1 & 1/2 tsp chili flakes

Instructions
 

  • In a large mixing bowl, add the chopped tomatoes, chopped onions and salt and stir together. Cover and set aside for 12 hours, overnight if possible in the fridge.
  • Drain liquid from tomato & onion & put in the slow cooker along with all the other ingredients & stir together. Cook in the slow cooker on high for 7-8 hours. If mix seems too runny after about 5-6 hours take the lid off for a few hours during cooking. If it still does not reduce enough make a paste mix of corn flour & vinegar & stir through & leave the lid off. I do stir it throughout the cooking from time to time.
  • Add to sterilised jars and seal Enjoy!
  • NOTE: If mix doesn't thicken enough you can drain it through a sieve & then place in the jars. The sauce is lovely poured over stir fry veggies or to flavour other dishes.

    Made this yesterday, usually have to stand for hours over a bubbling pan on the stove, but this was so easy, and it turned out beautifully, my usual attempts seem to be on the runny side but this batch seems perfect, I’ll certainly be making it again and trying other recipes too, thank you so much.

    Love the flavour of this. I thought my chunks of tomato were a bit large so at the end I wizzed it up a bit with a stick blender which did the trick and also made it less runny so didn’t need to thicken it. There’s still some chunky bits in it. I’m going to do the same again it worked so well.

    After a poor summer I’m pleased to be able to use unripe tomatoes. I like my chutney fruity so have added pre soaked raisins, diced medjool dates and grated apple skin & all.

    Made this today! It tastes great. Forgot to add salt to the vegetables after chopping, only realised when I went to tip the liquid off this morning! Put it in the slow cooker anyway, added all the spices and salt. The mixture was too thin but a little cornflour helped. Drained off most of the liquid and used the stick blender as my chopping skills are not great. The strained liquid I have kept hopefully will be used as sauce. Thank you Pauline!
