Grandmas Magic Custard Cake

Ingredients
 

  • 4 eggs, separated, at room temperature
  • 1 Tbsp water
  • ½ cup + 2 Tablespoons (5.3 oz, 150 g) sugar
  • 1 stick (125 g) butter, melted
  • ¾ cup (4 oz, 115 g) plain flour
  • 2 cups (500 ml) milk, lukewarm
  • 2 tsp vanilla extract

Instructions
 

  • Mix egg whites until stiff.
  • In another bowl, beat the egg yolks with the sugar, water and vanilla until light. Add melted butter and continue beating for another minute. Then add the flour and mix it in.
  • Add the milk (it has to be lukewarm, otherwise the butter will harden) and beat until well incorporated.
  • Gently fold in beaten egg whites using a spatula.
  • Pour batter into a paper lined crock pot.
  • Place tea towel between slow cooker and lid to absorb condensation.
  • I cooked on low 3 hours and 1 hour high. Used a Kmart crock pot so I'm sure times will vary. I just kept checking.
  • Cool in the pan.Serve sprinkled with powdered sugar.
  • The mixture is runny so don't worry, I know I did.

    I’ve cooked this twice now using different SC. The first time it cooked much faster and set much firmer *more like a custard slice). The second time took an extra 2 hours (!!) but was more like a Portuguese tart, especially when warm.
    Both were really good though and I will definitely be making this again.

  3. This turned out perfectly for me! Three beautiful layers; a fluffy, bubbly top, baked custard middle, and a dense, chewy, delicious base.
    My mum has since made it with Aldi’s gluten free flour and it worked perfectly for her as well.

      I think most are using 6L slow cookers for this one Delyse 🙂

  4. My grandmother never owned a slow cooker .. she never had anything electric how else can this be cooked

    Delicious cake! I used gluten free plain flour and it has come out perfect. I used a 7l Russell Hobbs slow cooker and put on low for about 2hrs 10 mins then about 1 hour on high. I probably could have done a bit longer on low and less time on high. I took it out when it was still a bit wobbly in the middle but the underneath was set when I put a fork in
