Garlic Chicken & Chorizo Pasta

Ingredients
 

  • 4 Cloves of Garlic
  • 1 chorizo
  • 1 brown onion
  • 2 chicken breasts diced
  • 300ml cooking cream
  • 1 small punnet of mushrooms
  • 1 bag of spinach
  • 1/2 cup Parmesan cheese
  • Parsley
  • Cracked Pepper
  • Cooked penne pasta to serve

Instructions
 

  • Sauté garlic, chorizo and diced onion for a minute or two add diced chicken and brown.
  • Then add the bottle of cream and put on low for 4 hours.
  • At the 2 hour mark add the mushrooms (note this can be done at the start if you prefer).
  • 5 mins before serving add the spinach stir until wilted
  • Then add your cooked pasta, Parmesan cheese, parsley and cracked pepper
  • Stir and serve.

    Cooked this last night?added bacon and used salami as I’m not a chorizo fan. Also threw in a small container of semi dried tomatoes from Woolies deli and not as many mushrooms or spinach. Definitely a winner winner garlic chicken dinner!!??

    This was to die for… I added paprika and Vagetta to the fry up and corn when I threw it all in the slow cooker… Amazing…

    Definately will do this again… And again…and again haha

    Delish!
    We used 800g of thigh fillet instead of breast as our family prefer thigh.
    I didn’t brown anything and I skipped the parsley
    It was so good everyone in our house enjoyed it!

    This is SUPERB. I doubled the Chorizo and added 270g of semi-dried tomatoes (available in a jar at the major supermarkets). Just drain the oil pre cutting them up. I added the semi-dried tomatoes with the mushrooms at the 2-hour mark.
