Easy Beef Pot Roast

A one pot healthy budget friendly family meal with tender roast beef and vegetables

Ingredients
 

  • 1.5kg Beef roast (Brisket, topside, chuck)
  • 2 large Carrots, thickly sliced
  • 2 large Potatoes, sliced into thick sticks
  • 2 rashers bacon diced
  • 1 Leek, thickly sliced
  • 3 Garlic cloves, diced or crushed
  • 8 small Eschallots (onions), peeled
  • 200g Mushrooms
  • 2 or 3 Bay leaves, depending on size
  • 4 large sprigs of Thyme or 1 tspn dried Thyme leaves
  • Cracked Pepper
  • Salt
  • 1tblspn Cornflour

Instructions
 

  • Place carrots and potatoes in slow cooker bowl
  • Scatter bacon, leek and garlic over carrots and potatoes
  • Season beef with cracked pepper and place in slow cooker bowl
  • Place eschallots and mushrooms around beef
  • Add bay leaves and thyme
  • Cook on LOW for 8hrs (Contempo 5.5L sc)
  • Mix the cornflour with 2 tblspns of water
  • Remove beef, cover with foil and allow to rest for 10-15mins
  • Season vegetables with salt and pepper to taste, stir in cornflour mix and leave to thicken
  • Slice beef and serve with vegetables and sauce

  1. OMG so very good, great flavours. Enough to serve 3 adults, and 2 meals put aside frozen for lunches, plus some cold meat over the weekend for sandwiches.

  2. I am new to using slow cookers , I take it you always add boiling water to cook your meat joints in ,

      No water needed at all.
      Always best not to ever use boiling water too as it can crack your bowl

    This is a great recipe I’ve made it with rolled beef and bolar beef. The rolled beef was better more tender. But both were good and a lovely flavor. A real favorite!

      It will reduce cooking time though risks drying it out or not as tender. I often start a roast of high to give it a kick start then leave it on low after the first 2hrs

  5. This is AMAZING! I added lots of extra veggies until my slow cooker was full to the brim and had it on low for 8 hours. I highly recommend this – it made a tough old cut of beef DELICIOUS!

    This was amazing. The taste, the texture…everything was perfect and it left us all silent in appreciation as we ate it. It’s not often that my family are quiet around the dinner table – there’s so much talking going on that a meal can take ages to consume and goes cold. But with this recipe we were silent except for the initial exclamation of “Yum!” Plates were cleaned, seconds were had and there was none left over.

  8. Hi there seeen so many yummy looking pics about roast beef and others so decided to try for myself! What I am puzzled about is there is no mention to add any water or oil to the SC pot so am assuming that would be a NO?? I also assume it must be cooking in it’s own juices hence no mention?

      No added water or liquid 🙂 It produces heaps

  9. Wow! I’ll be making this again. A hit with everyone in the family. The smell while it was cooking was very teasing but definitely got the spot at meal time. I added a lot of pepper for a pepper gravy. Delicious
