Creamy Herb & Garlic Chicken

Ingredients
 

  • 1kg skinless chicken thigh fillets
  • 150g chunky cut mushrooms
  • 1/2 red capsicum, diced
  • 3 green shallots, sliced fine
  • 225g Philadelphia cream cheese spread
  • 1/2 tsp basil
  • 1/2 tsp oregano
  • 2 cloves Garlic, minced
  • 1/4 tsp cracked black pepper

Instructions
 

  • Brown/seal chicken (optional)
  • Add all other ingredients to slow cooker and cook on low 4-6hrs depending on your machine 🙂

  2. Love this recipe, very creamy and super delicious. My family thought it was great 🙂 I made it in my 3.5 litre crockpot as it has a lower heat than my larger slow cooker. I will definitely make this again 🙂 I used chicken breast instead and that was fine, next time I’ll try the thighs 🙂

    I was planning to have pasta with this dish, but when I tasted that sauce… it soon changed to a lazy meal of chips.
    That sauce drizzled over the chips was to die for.
    What a great dish

    You can get lactose free cream cheese, a little dearer but great for this.

  7. This is so delicious! Was googling new recipes to try in my slow cooker and decided to try this! Added a bit extra of the herbs and had it on pasta, beyond tasty! Hubby is obsessed, would definitely recommend!

    This is amazing!! I added chorizo and last hour added penne with some chicken stock and water into slow cooker! Mouth watering goodness!!!

    Absolutely delicious!!
    I’ll add more mushrooms and a full capsicum next time. Might even try adding a little bacon. It doesn’t need bacon for flavour at all but just to experiment.
    Highly recommended this recipe.

  12. Very versatile this recipe. I have added, roasted capsicum strips, an extra carmelised onion, sundried tomato, olives, capers, baby spinach or just on its own as the recipe states. Very easy and tasty.

  13. Had me at cream cheese. Made this with 2 chicken breasts and halved the other ingredients. Definately going to be making this more often.

      This was great! Added extra garlic and herbs and served with mash. Would add more cheese next time and try with pasta.

    I added finely chopped red peppers and chorizo instead of mushrooms. Definitely a versatile meal that can be adapted to whatever you have in the fridge. Served with new potatoes, mash, rice or pasta, or on it’s own with crusty bread.

    Oh my goodness!!! such a tasty dinner.
    I omitted the mushrooms as my son does not eat them…was going to add finely sliced carrots but didn’t in the end…left them too late.
    Love meals like this, simple ingredients that make a delicious tasty meal 😋.
