~Creamy Chicken Dinner Delight~

Ingredients
 

  • 1kg skinless chicken thigh fillets, sliced
  • 3 washed potatoes skin on (350g) diced into rough cubes about 3cm cubed for fast cooking
  • 2 cloves minced garlic
  • 100g sun dried tomatoes in oil (oil drained)
  • 100g diced bacon pieces
  • 1 red onion diced chunky
  • 8 button mushrooms quartered
  • 1 x 420g can Cream of Asparagus soup
  • Salt and Pepper to taste
  • 300ml Light 'Cream for cooking'
  • 1 Cup chopped broccoli florets

Instructions
 

  • Place chicken thigh into slow cooker (no need for pre browning)
  • Add all other ingredients except broccoli and stir gently to combine
  • Cook on low for 4-5hrs
  • Add broccoli to slow cooker and stir gently.
  • Cover and cook for a further 30-45mins on low or until broccoli tender to your liking

  1. Yum! I only added half the amount of cream cheese as we don’t like a full on rich cheesy flavour. I also added mixed frozen vegetables and it was a big hit with the whole family. Will definitely be making this one again!

  2. I didn’t use cream cheese as it says Cream for Cooking so I just used the tub of Carnation Cooking Cream. Hopefully will be as nice and shouldn’t be a cheesy taste I think then

    This is a family favourite here. I swap the onion for leek (preference) and skip the mushrooms as my family don’t like them. I’ve used both cooking cream and Philadelphia cream for cooking (which really doesn’t have much of a cheese flavour) and it’s come out great both ways. I have also swapped the sundried tomato (when I didn’t have any) with a heaped spoonful of sundried tomato pesto and it was delicious.

    This was super tasty,I omitted the bacon, just preference,and needed to thicken with cornflour. the chicken was a bit dry may cook just 4.5hrs next time its possible my little slow cooker is running a bit too hot on low.
