Chicken Fried Rice

Chicken Fried Rice

Ingredients
 

  • 2 Tablespoons oil
  • 2 cups rice (uncooked)
  • 2 cups chicken stock
  • 1 onion, sliced
  • 1 cup mixed veges
  • 2 eggs
  • Left over roast chicken or Rotisserie Chicken from supermarket, cut up
  • Salt and Pepper to taste

Instructions
 

  • Fry rice in oil for about 5 mins to brown it. Place rice in slow cooker.
  • Add chicken stock to rice and turn slow cooker to high.
  • Fry onion till soft then add eggs and stir while it cooks. Add this to slow cooker.
  • Add mixed veges to the slow cooker and stir.
  • Lastly, add chicken and mix through.
  • Cook on high for approx. 2 hours with a tea towel under the lid.

    This is delicious I did alter ingredients a little to suit our taste but followed the method
    exactly as directed – I was about to give up completely on rice in the slow cooker until I tried this
    The only difference is my slow cooker is very hot so it only took 1hr and 10 mins in my 5.5L Sunbeam

  2. An absolute HIT in my house!! You could basically add whatever you want!! I’m making this again tonight and plan to add bacon and garlic and extra vegies

  3. Cooked this, changed slightly as I can sear/cook in the pan first.
    Browned the rice and onions, then added the egg, veggies then the stock.
    Cooked 1.5 hours on high in my new Breville 7L.
    Turned out great!
    Next time I hope to have some bacon and chicken on hand.

    I made this tonight and its definitely a winner. I used fresh vegies not frozen and put in bacon & chicken.

    I’ve made this a few times now and it never fails to be a hit in our house and now other family members. I find that 2 hours is also too long so it’s usually ready in 1 hr 20 mins. I don’t add the chicken either. Thanks for sharing!

    I have to admit that I was a bit hesitant trying this in the slow cooker. I adjusted with my own ingredients but basically followed the recipe. WOW! Perfect fried rice in 90 minutes! This will become a regular on our menu, and so much healthier than the take away version!

  8. This was a huge hit with all the family. Amazing!! I found that I needed to add a little more liquid, and ommited the chicken. Will be making again.

  10. I have stock cubes could I use some of them with boiling water rather then the carton of stock? If so how much would you reccomend?

      Just make them up to the same volume – 2 cups 🙂

  11. Can I use frozen mixed peas carrot corn?
    Should I add them in from the beginning or towards the end of the cooking time.

  12. Sadly I have had this cooking for 3.25 hours on high and the rice is still not cooked 🙁 I will keep cooking it and hope that it works – as the other food has not worked either = bit hungry

    I have made this a couple a times and its a winner. I use bacon instead of chicken and add soy and worcestshire sauce.

    The only way I do fried rice now.

    Does it matter what oil I use. Would using Sesame oil be ok to add some extra flavour?

    Is it necessary to fry onion egg and rice before throwing in slow cooker? I feel im making more dishes.

      While the egg and onion could go in raw the frying of the rice is an important step yes

    Tried this recipe for the first time last night and I have got to say it was absolutely delicious! I added chinese pork and mini prawns as well as the chicken to make it ‘combination’. It was a hit with all the family, which is nothing short of a miracle

      As the recipe says leftover rotisserie chicken then it’s cooked, not raw 🙂

    My oh my this was Soo good. I added prawns, bacon bits and Chinese pork, used 3 cups of stock
    Mine cooked on high for 1 hour and 30 mins on low.
    Next time I will add some bean sprouts for added crunch

  20. This was pretty good. Needs more spices. I added garlic, and cooked it for 1.5 hours and it ended up dry so I think I will add a cup of broth.. I also like the ideas of adding Chinese pork, maybe even bacon. I will also be adding liquid aminos next time I cook this. Very good recipe ! I like it much better than other recipes I have seen. Thanks !

      I would not alter this balance but do separate cookers with multiple batches Allison. It will provide about a full 3L cooker worth per single batch so unsure if you plan to serve as side or main but hope that helps 🙂

      I would use regular white rice, long grain is my usual go to 🙂

    I found this recipe very bland – & couldn’t get my family to eat it..
    We all love fried rice so were so hopeful this would be a winner ?

  24. I think I am misunderstanding the recipe, do you cook the rice before frying it or fry it dry?

      Hi KW, it’s dry fried just for 5mins to brown first then it’s added to the slow cooker (so it’s otherwise still essentially raw)

  25. I must admit I was dubious about rice in the slow cooker.
    I used my multi cooker to do the frying off then changed to slow cooker function. I would add abit more liquid for my slow cooker. Great to clean out the fridge leftovers.
    Will be doing again
