Chicken CARBONARA

I swear it’s as good as any restaurant pasta dish I’ve ever had. Freezing some for work meals next week.

Ingredients
 

  • 4 chicken thighs (can use breast)
  • 125g triple cream Brie cheese
  • 200g Camembert cheese
  • 300mls cooking cream
  • 1/2 green onion diced
  • Garlic to taste
  • Parsley (to taste)
  • Bacon diced. (As much as you like).
  • Cornflour to thicken (approx 2Tbs
  • Fresh fettuccini

Instructions
 

  • Dice chicken and put in slow cooker (again my choice, could leave whole).
  • Add remaining ingredients except cornflour and pasta.
  • Cook on high 4 hrs. Stir at 2hrs.
  • Cook pasta in microwave (my choice) or stove top.
  • While cooking pasta, add water to cornflour (not much) and add to chicken dish & stir
  • Stir again when pasta cooked.
  • Serve pasta with chicken CARBONARA on top.
  • Be prepared for 2nds and 3rds. (It’s that good).

    Do you remove the skin from the camembert and brie. Also do you chop them up?

      Removing skin is optional. Some like to as they don’t like the consistency of it in final dish? But I don’t remove. Yes chopping up is good
