Broccoli with Blue Cheese Soup

Ingredients
 

  • 2 heads Broccoli, chopped
  • 1 head Cauliflower, chopped
  • 2 Potatoes (Chopped)
  • 2 litres chicken stock
  • 2 brown onions, sliced
  • 1 cup dry white wine
  • 4 gloves garlic
  • 300g Blue cheese

Instructions
 

  • Place all ingredients in slow cooker except Blue cheese.
  • Cook on low for 8 hours.
  • 1 and a half hours before finish, add blue cheese.
  • Blend half hour before finish.
  • Serve with crusty bread.

    Very yummy! I used veggie stock and didn’t add any white wine. It’s the perfect amount of blue cheese.
