Barbeque Ranch Pulled Chicken

An easy prep dish, perfect for sharing on summer nights with family or friends. Serve on tortilla or pita wraps, with cheese and salad.

Total Time 4 hours 40 minutes

Ingredients
 

  • 1.5kg chicken breast fillets
  • 1 bottle good quality Ranch dressing
  • 1/4-1/2 cup good quality BBQ sauce

Instructions
 

  • Spray slow cooker with cooking spray
  • Place fillets in cooker
  • Pour 3/4 of Ranch dressing over chicken
  • Cook on LOW for 3-4 hours (or until internal temp of chicken reaches 82c)
  • Remove breasts into a bowl and shred with two forks
  • Empty slow cooker of juices
  • Place pulled chicken back into slow cooker
  • Add and stir through remaining ranch dressing and barbecue sauce
  • Cook on LOW for a further 30 minutes
  • Serve and enjoy
  • Try different flavoured BBQ sauces such as Honey BBQ or Smoky BBQ
