Bacon lattice chicken and pine nut meatloaf

Ingredients
 

  • 800gms of bacon rashes
  • 750 gms of chicken mince
  • 1 tbs of olive oil
  • 1 brown onion, finely chopped
  • 2 garlic cloves
  • 1/3 cup of pine nuts
  • 1 1/2 cups fresh bread crumbs
  • 3/4 of basil leaves ,finely shredded
  • 1 egg, lightly beaten
  • 1/4 cup parsley finely chopped

Instructions
 

  • Heat oil in a fry pan
  • Add onion , garlic and pine nuts
  • Cook stirring for 8 minutes or until softened
  • Allow to cool
  • Combine all ingredients EXCEPT bacon in a bowl and mix well
  • Mould into shape
  • Add to a rectangle baking dish and press down
  • Carefully fold over bacon lattice
  • Add onto the rack in the slow cooker ,or scrunched up foil balls as this creates a lot of juice
  • Cook on HIGH for 4 hours or LOW for 6 hours

    Absolutely loved this!! Was so moist but didn’t fall apart. My son who is a very picky eater absolutely loves this and has asked for it to be made every other week now.

    I made a version of this, no pine nuts, basil or bacon. (only because I had none at home).
    I used 3 chicken breasts whizzed up in my blender, because I had no chicken mince on hand.
    I whizzed the onion & garlic & mixed it in raw.
    Cooked in a loaf tin, raised by egg rings in the SC, 5 hours on high.
    Yum.
