Bacon and Beef Parmi Loaf

A beef version of our popular chicken and bacon parmi loaf!

Ingredients
 

  • 500 grams of beef mince
  • 2 tablespoons of garlic powder
  • 2 tablespoons of oregano
  • 2 tablespoons of parsley,
  • 2 tablespoons of basil
  • 1/2 cup breadcrumbs
  • 1 cup mozzarella cheese
  • 1 jar pasta sauce (I used Dolmio)
  • 10 pieces of shortcut bacon
  • 2 eggs

Instructions
 

  • Combine spices, eggs, mince, breadcrumbs in a large bowl.
  • Mould into a rectangular loaf shape and cut in half.
  • Place 150 grams of mozzarella cheese in the middle of halves of loaf.
  • Reshape loaf together and smooth all outside edges.
  • Cover outside of loaf with bacon. I secured with toothpicks. Place on top of slow cooker. I lined mine with baking paper to avoid sticking.
  • Sprinkle half of remaining cheese on top of loaf.
  • Cover with jar of pasta sauce and remaining cheese.
  • Cook on high for four hours.

    We thought that this looked tricky, but actually turned out to be quite simple to make. Only problem with my 5 eaters was that 500g mince really wasn’t enough as they all wanted seconds. And I didn’t have any pasta sauce, so just used a tin of chopped tomatoes. I used baking paper but found that it was quite messy, so next time will try it without as the bacon didn’t seem to stick at all, especially with the saucy tomatoes. Can’t wait to try it again.

    Great recipe but tweaked it a tad out of convenience. Switched crumbs for coles brand “stuffing mix”. Added fresh garlic and sugar to the sauce. Delish ??
