Apricot Chicken Curry

Ingredients
 

  • 1kg of chicken drumsticks (you can substitute for any cut of chicken - on bone or fillets - reduce time for fillets)
  • 1 x 40g pkt dry french onion soup mix
  • 1 diced onion
  • 1 x 425ml tin of apricot nectar
  • 1/2 tsp curry powder

Instructions
 

  • Lay chicken and diced onion in slow cooker bowl.
  • Combine soup mix, curry powder and apricot nectar.
  • Pour over chicken and cook on low for 6hrs approx.
  • *note*
  • This recipe can be changed to mango curry chicken simply by swapping the apricot nectar for mango nectar

    I love this recipe, have been cooking it for years when I had family at home loved by all (even the cat loved it, minus the onion ) only other thing I added was a tin of apricot halves.

      Depending on how many/how thick etc if they are whole I would reduce down to closer to 4hrs or a bit less 🙂

    Giving the mango version a stab tonight…… Used chicken lovely legs, and had to sub spring veg soup as had no french onion, so added a diced carrot and some celery, plus some garlic and onion powder. Fingers crossed!! I’ll keep you posted 🙂

    If you want a thicker sauce. Combine the French onion and nectar and heat up first like you are making soup, either in a sauce pan or slow cooker if it can do the temp. Once it thickens throw everything in. I find if you don’t it doesn’t thicken up. I also double both nectar and soup as we love sauce.

    how long would you cook in the slow cooker if you use chicken breast fillets…..4hrs?

      For breast fillet they would be done in around 3hrs 🙂

    I made it with pineapple juice as that was what I had in the house. I’ve had it with the apricot nector before as well and both were delicious! Such an easy dinner

    I made this recipe s couple of days ago and loved it. Even the fussy eaters in the house thought it was great. I add cooked rice for the last 30 mins which soaked up some of the liquid and was a great side. Yum!!!

    Yummy ? made as the recipe stated with 2kg drumsticks and it was so nice, hubby even liked it even though he said he doesn’t eat apricot chicken which now he does haha

    I didn’t really love this ? BUT I will say, to my shock, my 2 little ones ate it all up without a complaint which pretty much never happens so it was a win in that regard!

    This is a firm favourite in our household. I do like to coat the chicken in seasoned flour and sear first before putting in slow cooker. We had it on Tuesday this week, then with the leftovers, for the following night, after reheating, I shredded the chicken and added cooked pasta.

    we don’t have apricot nectar in Egypt. The nearest is dried apricots. Could I soak the dried apricots and then blitz them, would it turn out nice? Or fresh apricots when in season. We also get dried apricots in sheets could i dissolve this.

      Can you get a canned apricot in some sort of juice or nectar – you could blitz them
      Failing that then yes I’d use fresh apricots a little pureed

    I cooked a version of this today and it was delicious! perfect comfort food.
    I used 600 grams of chicken tenderloins and kept to the same ingredients for the sauce. Served with rice.

    I made this last night, I did flour and sear the chicken drumsticks before I put them in the slow cooker. It was SO good, real comfort food. Mr 14 said it was amazing after he came home from soccer training.

    hello all, when making this slow cooked chicken curry (which I do frequently) I follow the recipe but pat flour on the chicken prior to putting in slowcooker. This makes the sauce thicker which in my opinion is better.
