Sweet Sausage Curry

Sweet Sausage Curry

Ingredients
 

  • 16 thin beef sausages
  • 2 medium onions diced
  • 2 small green granny smith cooking apples, peeled, cored and diced
  • 2 cloves Garlic, minced
  • 3 tsp mild curry powder (I used Keen’s brand)
  • 1/2 tsp minced ginger
  • 1.5 cups beef stock liquid
  • 2/3 cup fruit chutney (I use Rosella brand)

Instructions
 

  • Cut raw sausages into chunks – about 6 pieces per sausage
  • Place sausages, onion and apple into slow cooker
  • Combine other ingredients, mix well and pour over
  • Cook on low for 4-6hrs

Notes

  • Serve with mashed potato and vegetables of your choice
  • This serves our family of 5 with leftovers for at least another 2-3 serves for work dinners

  2. I made this last week but added about 1tsp tumeric, 1tsp cumin, 1 extra tsp of curry powder, 1tsp red chilli flakes, and 2 cups beef stock. Served it with mashed potatoes. It was divine. Making it again today!

    The whole family loved this one. Have to admit I was a bit hesitant with fruit chutney but gee it was nice.

  5. Very nice and easy. Used leftover chutney and no onions but tasted great. Next time I will add onions.

  6. I made this specifically for my children (1 and 3) so I ‘kidified’ it slightly by par boiling the sausages first, removing the skins and dicing. I also added diced potatoes, carrots and peas. I found it a touch too hot towards the end (for the kids not for me it was delicious!) so I added a tin of coconut milk to calm the spices. Teamed with some jasmine rice I had clean bowls all around. Definitely a winner 🙂

  7. Absolutely delicious! Definitely a winner in our house. So quick and easy.
    I used a whole jar (320g) of Chunky Fruit Chutney from Aldi and it wasn’t too much.
    Was planning on having some leftovers…….but it was so delicious, everyone went back for 2nds!

    Really enjoyed this! I substituted the fruit chutney with a mango chutney I had in the fridge instead which was still delicious! I did find it was quite watery coming to the end still but think this may be due to the fact I had 2 larger apples (should have just used 1 instead!) so I had to turn on high to try and reduce the liquid but apart from that it is highly recommended – even with the curry which I am not normally a big fan of, was perfectly balanced!

  11. I made this recipe today and it was so yummy even my very fussy hubby enjoyed it and he even asked for another bowl full, we had it with rice and it was delicious. This will definitely be in our weekly rotation of meals. So easy and so Yum!

    Added 4 tsp curry powder & 3 cloves the apple went unnoticed and gave lovely flavour – win win!!! This will be a regular one for us and budget friendly as well
    Hubby woofed it down had a second helping he said it was absolutley beautiful! Servied meal with mashed potato !!

    This was so yummy! I didn’t put the ginger in as we didn’t have any, but next time I will pop some in. I also added more chutney that the recipe states as I love it. I served with mashed potato, yumm! ?

  15. I made this today for the first time. I did a big batch and added celery, carrot, spinach, beans and lentils so I’d have plenty of meals to freeze . It was delicious.

    This was delicious. The only change I made was I used tomato chutney as I had no fruit chutney. There is 4 containers in the freezer for an easy meal. Will definitely make again

    5 stars, BUT….. I made a lot of changes out of necessity, based on my fridge and pantry…

    *8 thick sausages instead of 16 thin.
    *Had no onions – used dried chives.
    *Used powdered ginger and garlic.
    *Had no fruit chutney, so used Bunya Nut relish with some plum jam to sweeten – the nutty flavour was devine , mixed with the sweetness of the plum jam, and slight bite of the curry.
    *Was watery still after 4.5hrs on low, so added penne pasta for last half hour and it soaked it up perfectly.
    *Probably only made enough for 5 serves.

    Husband went back for seconds and is now groaning on the couch, overfull, but still telling me how delicious it was!

    I made this for the first time today, I used veggie sausages with veggie stock, I also used a mango ginger and bean key apple chutney. It was delicious, served with buttery mash and tenderstem broccoli. I will definitely be making this again.

    My super fussy, has never eaten anything cooked in a ‘sauce’ before (let alone curry!) 6 year old declared this recipe “so good!” Can’t get higher praise than that! 🙂

    this is a family favourite, I also make it for some of my home care clients as it’s very popular with them too.
    the only change I do to the recipe is add 2-3 sliced carrots, around a cup of diced pumpkin or sweet potato, and just before serving add some frozen peas and corn and serve with mash potato

    Wow, another new favourite thanks Paulene.
    It reminds me of my stovetop version without the Apple.
    I found it had a lot of liquid and held 8 hours cook time easy before thickening with cornflour at the end.
    Made 7 serves some with mash, some with rice plus peas n corn.
