Mango Chicken

November 19, 2014

  • Prep: 5 mins
  • Cook: 6 hrs
  • Yields: 4 (2 adults, 2 children)

6 thigh cutlets (on bone) - however any cut of chicken or fillet would work fine too

1 onion diced

1 40g pkt french onion soup mix (dry - no water added)

1 x 425g can of mango pieces in nectar (Whole or blitzed to purée)

1Place chicken of your choice into slow cooker with onion

2Combine soup mix and juice from tin mangoes and pour over chicken

3Add mango pieces (or the combined purée)

4Cover and cook on low for 6hrs.

5Some machines may cook in closer to 4hrs depending on the cut of chicken used and the machine

6*Optional* 15 mins before serving take out chicken, remove from bone and return meat to pot to combine.

This was delicious, I omitted the onion and instead of 1 can of mango I did 1 and about 3 quarters of another, I also used chicken thighs with bones removed. It turned out beautiful at the end I removed the chicken cranked the sc up to high and added a mix of cornflour and a little water (just enough to dissolve the cornflour) to thicken. Will definatly make this again.
